Main Ingredients

  • 4 handfuls soaked dried seaweed (approx. 200g)
  • 7 small abalones, cleaned
  • 2 pieces dried kelp (approx. 10cm x 10cm)

Seasoning & Broth

  • 1 Tbsp fish sauce or soy sauce for soup
  • 1 Tbsp sesame oil
  • 1 Tbsp rock salt or regular salt (adjust to taste)
  • 1.5 L water (for broth)

Cooking Instructions

Step 1

Soak dried seaweed in cold water for about 20-30 minutes until softened. Once tender, rinse thoroughly under running water 2-3 times, squeeze out excess water, and cut into bite-sized pieces (about 3-4 cm). Be careful not to soak for too long, as this can cause nutrients to leach into the water.

Wash the small abalones clean under running water using a brush to scrub both the shell and the surface.

Prepare the abalone: Hold the abalone shell firmly with one hand. With the other hand, insert the tip of a spoon or knife between the abalone meat and the shell, and gently pry to separate the meat from the shell. This method allows for easy separation of the chewy abalone meat.

Make abalone broth: Place the cleaned abalone shells and kelp pieces into a pot. Add 1.5 L of water. Bring to a boil over high heat. Once boiling, remove the kelp, but continue to simmer the abalone shells for about 10 minutes to create a flavorful broth.

Prepare for stir-frying: Add the soaked and cut seaweed to the pot along with the prepared abalone. Drizzle in 1 Tbsp of fish sauce or soup soy sauce and gently toss to coat the ingredients evenly. Let it marinate for a short while.

Stir-fry and simmer: Add 1 Tbsp of sesame oil to the marinated seaweed and abalone. Stir-fry over medium-low heat for about 3-5 minutes until the seaweed and abalone are tender and fragrant. Pour in the prepared abalone shell broth and bring to a boil over high heat. Once boiling, reduce heat to medium-low and simmer for another 10 minutes to allow the flavors to meld. Season with rock salt or regular salt to your preference, tasting and adjusting as needed. Stir occasionally with a ladle while simmering to prevent sticking and ensure even seasoning.
