Cooking Instructions

In a pot of boiling water, add 3 tablespoons of soju and blanch the abalone for 2-3 minutes. Adding soju helps to eliminate any fishy odor and makes the abalone’s texture more tender, facilitating easier preparation.

Rinse the blanched abalone under cold water and carefully remove the intestines. These abalone intestines will be used later to make a flavorful abalone liver omelet. Don’t discard the abalone shells; wash them thoroughly and store them in the freezer to use for making stock later. Now, slice the abalone thinly into pieces. Since there isn’t a large quantity of abalone, slicing them very thinly will ensure a pleasant chewy texture within the sushi roll.
