Main Ingredients
  • 5 small abalone
  • 1 handful of perilla peppers (about 10-15 peppers)
  • A small amount of red chili pepper (for garnish, optional)

Seasoning
  • 1 Tbsp cooking oil
  • 1 Tbsp cooking wine (Mirin or Sake)
  • 1 Tbsp oligosaccharide (or corn syrup)
  • 1 Tbsp sesame oil
  • 2 Tbsp soy sauce for stir-fry (or regular soy sauce)
  • 1/2 Tbsp sesame seeds

Cooking Instructions

Step 1

Prepare your ingredients: 5 small abalones, a handful of perilla peppers, and about half a red chili pepper for color. The red chili pepper is optional and can be adjusted to your preference or omitted entirely.

Step 2

Thoroughly clean the abalones under running water, using a brush or kitchen scrubber to remove any grit. Gently pry the abalone meat from the shell using a spoon. Remove the hard mouthpart and viscera. (Tip: Save the abalone viscera to make a nutritious abalone porridge later!) Score the abalone meat with shallow cuts to help it absorb flavors and tenderize. Cut the perilla peppers into 2-3 pieces diagonally, depending on their size.

Step 3

Heat a wok or frying pan over medium-low heat and add 1 Tbsp of cooking oil. Add the prepared abalone and stir-fry for about 2 minutes. Searing the abalone first in oil helps to seal in its natural juices, ensuring a tender and chewy texture while preventing it from becoming tough.

Step 4

Once the abalone is slightly cooked, add the perilla peppers to the pan and stir-fry them together. Next, pour in 1 Tbsp of cooking wine, 1 Tbsp of oligosaccharide, and 2 Tbsp of stir-fry soy sauce around the edges of the pan. Continue to stir-fry for about 3 minutes, allowing the sauce to coat all the ingredients. The savory soy sauce and mild sweetness of the oligosaccharide will infuse the abalone and peppers with a wonderful flavor.

Step 5

Just before turning off the heat, drizzle in 1 Tbsp of sesame oil for a nutty aroma. Finally, sprinkle with sesame seeds for a beautiful finish. Your delicious Abalone and Perilla Pepper Stir-Fry is ready! It’s a fantastic side dish for rice or a great accompaniment to beer or soju.
