First, let’s create a fragrant scallion oil! Finely chop the scallions. Heat 1.5 tablespoons of perilla oil in a pan over medium-low heat. Add the chopped scallions and stir-fry until golden brown, being careful not to burn them, to release their aroma. This step significantly deepens the flavor of the kimchi fried rice.

Add the finely chopped kimchi to the sautéed scallions. Stir-fry vigorously over high heat until the kimchi is well-cooked and fragrant. It’s important to cook off some of the moisture from the kimchi.
