  • 70g fresh wild chives (daelae)

  • 3 Tbsp soy sauce

  • 1 Tbsp sesame oil
  • 2 tsp toasted sesame seeds

Crispy Bean Sprout Salad (Kongnamul Muchim)

  • 2 handfuls of bean sprouts (about 100g)
  • 1 Tbsp chopped green onion
  • 1 tsp minced garlic
  • 1 Tbsp sesame oil
  • A pinch of salt (to taste)

Savory Beef Stir-fry

  • 100g ground beef
  • 1 Tbsp chopped green onion
  • 1 tsp minced garlic
  • 1 Tbsp soy sauce
  • 1 tsp sugar
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, prepare the fragrant wild chives (daelae). Gently rinse them under running water to remove any soil, and pick out any yellow or wilted leaves. Thoroughly wash the root ends, and then finely chop the entire chive plant from root to tip to enhance its aroma. (Tip: To preserve the delicate aroma, avoid washing the chives for too long.)

Step 1

Step 2

In a bowl, combine the prepared wild chives with gochugaru, sugar, chopped green onion, minced garlic, soy sauce, sesame oil, and toasted sesame seeds. Gently mix everything together to create a flavorful wild chive sauce. Ensure all ingredients are well incorporated. (Tip: Feel free to adjust the amount of soy sauce or sugar to suit your preference.)

Step 2

Step 3

Next, let’s prepare the savory beef stir-fry. In a bowl, combine the ground beef with chopped green onion, minced garlic, sugar, soy sauce, and sesame oil. Mix well and let it marinate for a short while to absorb the flavors. Heat a pan over medium-high heat and add the marinated beef. Stir-fry briskly, breaking up any clumps with chopsticks or a spatula until the beef is cooked through. (Tip: Stir-frying quickly over high heat prevents the beef from becoming tough.)

Step 3

Step 4

Once the beef is almost cooked, add the finely julienned carrots and thinly sliced shiitake mushrooms to the pan. Continue to stir-fry together until the vegetables are tender-crisp. The key is to maintain a slight crunch in the vegetables. (Tip: Avoid overcooking the vegetables, as they can release too much moisture. Cook them quickly over medium-high heat.)

Step 4

Step 5

Now, let’s make the crispy bean sprout salad. Place the bean sprouts in a pot and add just enough water to cover them lightly. Cover the pot and boil until the bean sprouts are tender yet still retain a pleasant crunch. This crispiness is crucial! Drain the bean sprouts well and transfer them to a bowl. Add minced garlic, chopped green onion, sesame oil, and a pinch of salt. Gently toss everything together to combine. (Tip: To prevent a ‘fishy’ smell, avoid lifting the lid of the pot frequently while boiling the bean sprouts.)

Step 5

Step 6

Finally, it’s time to assemble your beautiful bibimbap. Spoon the warm cooked rice into a serving bowl. Arrange the prepared bean sprout salad and the savory beef stir-fry attractively over the rice. Generously spoon the fragrant wild chive sauce on top. Give it a good mix, and your delicious Kongnamul Daelae Bibimbap is ready to be enjoyed!
