  • 1 Green Onion
  • 1 handful Enoki Mushrooms
  • 1 cluster Oyster Mushrooms
  • 1 Shiitake Mushroom

  • 1 Tbsp Minced Garlic
  • Pinch of Ginger Powder (or fresh ginger juice)

  • 2 Tbsp Mirin (Rice Wine)
  • 1/2 Onion (grated)
  • 1/2 Apple (grated)

Broth Seasoning

  • 300ml Water
  • 3 Tbsp Soy Sauce (Guk-ganjang preferred)
  • 1 Tbsp Sugar
  • Pinch of Black Pepper
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Mirin (Rice Wine)

Cooking Instructions

Step 1

First, let’s prepare the essential beef marinade for your bulgogi hot pot. Grate half an apple and half an onion until finely processed, using a blender or grater. In a bowl, combine the grated fruits and vegetables with all the marinade ingredients: soy sauce, sesame oil, minced garlic, ginger powder, sugar, sesame seeds, and mirin. Mix well until there are no lumps. The natural sweetness from the fruit and the flavor of the onion will make the beef incredibly tender and delicious.

Step 1

Step 2

For this hot pot, we’ll be using fresh, high-quality Korean beef specifically cut for bulgogi. Ensure the beef is well-drained of any excess blood for the best result.

Step 2

Step 3

Add the 600g of marinated bulgogi beef to the prepared marinade and gently mix it with your hands. Let it marinate in the refrigerator for at least 30 minutes to allow the flavors to deeply penetrate the meat, resulting in a richer taste. If you have time, marinating for up to an hour is also great.

Step 3

Step 4

A quick tip! If you were to mix this marinated beef with the vegetables and cook it directly in the pot without broth, you would have a delicious stir-fried bulgogi dish. However, since we’re making a hot pot today, let’s move on to the next step.

Step 4

Step 5

Arrange the prepared vegetables around the edges of your hot pot. This includes Napa cabbage, bell peppers, carrots, green onions, oyster mushrooms, and shiitake mushrooms, artfully placed for visual appeal. Create some space in the center and carefully lay the marinated beef on top. The vibrant colors of the vegetables combined with the rich red of the beef will look incredibly appetizing.

Step 5

Step 6

Now, it’s time to create the flavorful broth that will complete your bulgogi hot pot. In a pot, combine 300ml of water with the broth seasoning ingredients: soy sauce, sugar, black pepper, minced garlic, sesame oil, and mirin. Stir well to combine. Gently pour this seasoned broth over the vegetables and beef in your hot pot. Turn the heat to high and bring it to a boil.

Step 6

Step 7

Once it starts to bubble vigorously, reduce the heat to medium-low and let it simmer until all the vegetables and beef are tender and cooked through. You’ll soon be greeted by a wonderfully savory aroma! And there you have it – your delicious Korean Beef Bulgogi Hot Pot, perfectly balanced with sweet and savory notes, a true rice-lover’s dream! Enjoy it by spooning it over a bowl of hot steamed rice for an unforgettable meal.
