60-Year-Old Traditional Pork Ribs Golden Recipe
The Ultimate Pork Ribs Recipe from ‘Manmulsang Recipe’ – Enjoy Authentic Flavor at Home!
I initially intended to make pork ribs with pork shoulder but stumbled upon this recipe, and it turned out so delicious that I haven’t eaten out for ribs since! It’s a game-changer for home cooking.
Main Ingredients- 1kg pork belly or pork shoulder
- 4 Tbsp soy sauce
- 2 Tbsp corn syrup (or oligosaccharide)
- 3 Tbsp brown sugar
- 2 Tbsp sesame seeds (or ground sesame seeds)
- 1 Tbsp minced garlic
- Pinch of black pepper
- 1/2 cup (100ml) water
- 1/2 tsp mustard
- 5 Tbsp chopped green onion
Cooking Instructions
Step 1
First, gather all the ingredients for the pork ribs marinade. The 4 Tbsp of soy sauce is a generous amount, but if you prefer a milder flavor, you can add an extra 1-2 Tbsp. For those planning to marinate the meat for an extended period, adding a bit more soy sauce will deepen the flavor.
Step 2
Add 1 Tbsp of minced garlic to the marinade. Garlic is crucial for removing any gamey smell from the pork and enhancing its umami flavor.
Step 3
Next, add 4 Tbsp of soy sauce. This forms the base of your marinade. You can use either regular or dark soy sauce, but dark soy sauce generally gives a richer color.
Step 4
Stir in 2 Tbsp of corn syrup. Corn syrup adds a beautiful sheen to the ribs and helps the marinade penetrate the meat. Oligosaccharide is a good substitute if you don’t have corn syrup.
Step 5
Add 3 Tbsp of brown sugar. Brown sugar provides a deeper, more complex flavor and a richer caramel color compared to white sugar, making the ribs look even more appetizing. If brown sugar isn’t available, regular sugar will work, but the color won’t be as vibrant.
Step 6
Incorporate 2 Tbsp of sesame seeds (or ground sesame seeds). Using freshly ground sesame seeds will offer a more intense nutty aroma. If grinding them is too much hassle, adding whole sesame seeds is perfectly fine.
Step 7
Sprinkle in a pinch of black pepper. Black pepper helps to mask any pork odor and adds a subtle hint of spice. Be careful not to overdo it.
Step 8
Add 1/2 tsp of mustard. Mustard is a secret ingredient that cuts through the richness of the meat and adds a clean finish to the taste. Don’t worry if you accidentally added a little more; it often blends in well and enhances the overall flavor profile.
Step 9
Finally, add 5 Tbsp of chopped green onion. Green onions contribute a fragrant aroma and can help tenderize the meat, complementing the marinade beautifully. If chopping finely is difficult, simply rough chopping is also acceptable.
Step 10
Pour in 1/2 cup (approx. 100ml) of water. This water is essential when cooking in a pan; it prevents the marinade from burning and ensures the meat cooks through evenly and stays moist. If your marinade tastes too salty from the soy sauce, feel free to add a little more water.
Step 11
Add the 1kg of pork (belly or shoulder) to the prepared marinade. Ensure all the meat is coated evenly with the delicious sauce.
Step 12
For best results, marinate the pork in a zip-top bag or an airtight container. This ensures the marinade penetrates every nook and cranny of the meat, leading to superior flavor and texture.
Step 13
Refrigerate the marinated pork for at least 30 minutes to allow the flavors to meld. For an even more profound taste, marinate for 2-3 days. However, even with just 30 minutes, you’ll achieve wonderfully delicious pork ribs!
Step 14
Place the marinated pork ribs in a skillet and cook over low heat. While it’s not grilled over charcoal, this pan-frying method yields incredibly flavorful ribs that are perfect with rice – a true ‘rice thief’!
Step 15
Flip the ribs occasionally to ensure they cook evenly and don’t burn. Keep an eye on the heat, as the marinade can caramelize and burn quickly.
Step 16
Allow the sauce to thicken and coat the ribs, cooking slowly over low heat until the liquid is reduced. This process concentrates the sweet and savory flavors of the pork ribs.
Step 17
Observe the ribs as they cook, developing a glossy, caramelized exterior. The sizzling sound and mouthwatering aroma will surely whet your appetite.
Step 18
Serve the delicious pork ribs alongside a bowl of warm rice. They are also fantastic piled on top of rice and mixed in – truly irresistible!
Step 19
Once cooked, cut the pork ribs into bite-sized pieces and arrange them on a plate. Your delicious homemade pork ribs are now ready to be enjoyed!
