  • 2 stalks of scallions (daepa)

Secret Dressing
  • 1 Tbsp secret sauce base
  • 1 Tbsp vinegar
  • 1 Tbsp sesame oil

Making the Special Secret Sauce Base
  • 1/7 cup flavor salt (approx. 2 Tbsp)
  • 1 cup sugar (approx. 150g)
  • 1 cup chili powder (approx. 80g)

Cooking Instructions

Step 1

Thoroughly wash the 2 scallion stalks. Trim off the root ends. Slice them lengthwise into thin strips, about 1cm thick. Slicing them finely, like in the picture, will enhance the texture.

Step 2

Now, let’s prepare the special secret sauce base. In a bowl, combine 1/7 cup of flavor salt (measured with a paper cup, approximately 2 Tbsp), 1 cup of sugar (about 150g), and 1 cup of chili powder (about 80g).

Step 3

Using a spoon or a whisk, mix all the sauce ingredients thoroughly until well combined. Gently stir to ensure the sugar dissolves without any clumps.

Step 4

To the sliced scallions, add 1 Tbsp of the secret sauce base, 1 Tbsp of vinegar, and 1 Tbsp of sesame oil. Gently toss the scallions to coat them evenly with the dressing. Be careful not to mix too vigorously, as this can break down the scallions.
