Cooking Instructions

Step 1

Slice the baguette into approximately 1.5cm thick pieces. You can adjust the thickness based on the size of your bread and your preference.

Step 1

Step 2

Heat 3 tablespoons of butter in a pan over medium-low heat. Place the sliced baguette on the melted butter and toast both sides until golden brown and delicious. This step is crucial for achieving a delightful crispiness.

Step 2

Step 3

Slice the eggplant diagonally into pieces that are similar in shape to your tomato slices, about 0.5cm thick. This will make for a more visually appealing presentation later.

Step 3

Step 4

Remove the stem from the tomato, then slice it vertically into 8 or 10 wedges, about 0.8cm thick. Aim for bite-sized pieces.

Step 4

Step 5

Lightly season both the eggplant and tomato slices with a pinch of salt and pepper. Place them in a dry pan (no oil) and grill each side until slightly softened and their moisture has reduced, which will enhance their flavor.

Step 5

Step 6

Once the eggplant and tomato are grilled, let them cool slightly. Place them in a bowl, drizzle with 2 tablespoons of olive oil, and toss with 8 tablespoons of balsamic vinegar. Let them marinate to allow the flavors to meld together.

Step 6

Step 7

In a small saucepan, combine 8 tablespoons of balsamic vinegar and 2 tablespoons of honey. Simmer over medium-low heat until the mixture slightly thickens into a glaze. Remove from heat and let it cool completely. This balsamic glaze will add a wonderful depth of flavor to your tartines.

Step 7

Step 8

Generously spread 5 tablespoons of cream cheese onto the toasted baguette slices using a spoon or knife. Ensure an even coating for a creamy texture.

Step 8

Step 9

Arrange the marinated eggplant and tomato slices attractively on top of the cream cheese. For garnish, dot small pieces of cream cheese around and add fresh herb leaves (like basil or mint) if you have them. This adds color and freshness.

Step 9

Step 10

Finally, drizzle the prepared balsamic glaze over the assembled tartines. The sweet and tangy glaze will complement the other flavors perfectly.

Step 10

Step 11

Now, let’s make the peach tartine! Slice the nectarine into approximately 0.7cm thick wedges, removing the pit. Cut them vertically for a nice presentation.

Step 11

Step 12

Melt 1 tablespoon of butter in a pan over medium-low heat. Place the sliced nectarines in the pan and grill them on both sides until they are lightly browned and softened.

Step 12

Step 13

Once the peaches are slightly cooked, sprinkle 2 tablespoons of sugar over them and continue to cook, allowing the sugar to caramelize and create a sweet, fragrant coating on the fruit. Be careful not to burn them.

Step 13

Step 14

Spread 3 tablespoons of cream cheese on another toasted baguette slice. Arrange the caramelized peach slices on top. Finish by dusting lightly with powdered sugar for a sweet and elegant peach tartine!

Step 14

Step 15

Lastly, let’s prepare the baked Camembert & Pecan Tartine. Slice the Camembert cheese wheel into approximately 1cm thick rounds.

Step 15

Step 16

Place the cheese slices on a serving plate or directly on the tartine base. Use a kitchen torch to lightly char the surface, or place them in a preheated oven or air fryer for just 1-2 minutes until the cheese is slightly melted and fragrant. Avoid overcooking.

Step 16

Step 17

Roughly chop the walnuts and pecans using the side of a knife or a chopper. You want a noticeable texture, so don’t chop them too finely. Sprinkle the chopped nuts generously over the lightly baked Camembert cheese.

Step 17

Step 18

Drizzle with maple syrup to your liking. This will create a delightful combination of rich cheese flavor, nutty crunch, and sweet syrup, completing your impressive Baked Camembert & Pecan Tartine!
