Main Ingredients
  • 300g Whole wheat flour
  • 2g Salt
  • 6g Instant dry yeast
  • 240ml Lukewarm water (approx. 40℃)
  • 50g Nuts (e.g., cranberries, walnuts)

Cooking Instructions

Step 1

In a large bowl, combine the sifted whole wheat flour (300g). Add the salt (2g) and instant dry yeast (6g) to opposite sides of the bowl. Be careful not to let the yeast and salt come into direct contact, as this can hinder fermentation. Lightly mix them into the flour.

Step 2

Pour in the lukewarm water (240ml) and mix with a spatula or dough scraper until no dry flour remains. The dough will have a sticky consistency.

Step 3

Once the dough is somewhat cohesive, add the nuts (50g, such as cranberries or walnuts) and mix them evenly throughout the dough. Feel free to use your favorite nuts or adjust the quantity to your preference.

Step 4

Cover the bowl tightly with plastic wrap and let it proof in a warm place at room temperature for the first rise. This usually takes about 40 minutes, but it’s more important to observe the dough’s condition than the exact time. Allow the dough to double or triple in size.

Step 5

You can check if the first rise is successful in a few ways. If you poke the dough with a lightly floured finger and the indentation remains, or if you see elastic, web-like strands when lifting the dough, it means the fermentation has worked well.

Step 6

Gently transfer the proofed dough to a lightly floured surface. Divide it into desired portions and shape them into rounds or your preferred loaf shape. Cover the shaped dough again with plastic wrap or a damp cloth and let it proof at room temperature for a second rise, for about 30 minutes.

Step 7

Before baking, lightly dust the top of the proofed dough with whole wheat flour. Using a sharp knife or a lame (bread scoring tool), create your desired score marks on the surface. Scoring helps control where the bread expands during baking and adds a decorative touch.

Step 8

Place the shaped and scored dough into your air fryer and bake at 160°C (320°F) for 20 minutes. If using a conventional oven, bake at 180°C (350°F) for 20 minutes. Please adjust the temperature and time according to your specific appliance’s specifications.
