Pho Noodles Ingredients

  • 1 packet store-bought Pho soup base (refer to package instructions)
  • 1 serving dried rice noodles
  • 2 slices thinly sliced beef (such as brisket or shabu-shabu cut, approx. 50g)
  • 1 handful fresh bean sprouts (approx. 50g)
  • 1/4 lemon, cut into wedges
  • A small bunch of cilantro, mint, or chives (optional, cut into 2-3 cm lengths)
  • 1/4 red chili, thinly sliced (for garnish)
  • 1 stalk scallion, finely chopped (for garnish)

Sweet & Sour Pickled Onions

  • 1/2 onion, thinly sliced
  • 2 tsp salt
  • 2 Tbsp sugar
  • 4 Tbsp vinegar
  • 6 Tbsp water

Cooking Instructions

Step 1

First, prepare the crunchy and tangy pickled onions. Place the thinly sliced onion in a bowl. Add 2 tsp salt, 2 Tbsp sugar, 4 Tbsp vinegar, and 6 Tbsp water. Gently mix with your hands until well combined. Let the onions sit for about 5 minutes to soften and absorb the sweet and sour flavors.

Next, cook the rice noodles. Bring a pot of water to a boil and add the dried rice noodles. Cook for about 30 seconds, or alternatively, soak them in cold water for 10 minutes until pliable. Be careful not to overcook the noodles, as they can become mushy. Drain the noodles well after cooking or soaking.

Now, make the warm pho broth. Pour the store-bought pho soup base into a pot and add water according to the package instructions. Bring the mixture to a boil. Once boiling, add the thinly sliced beef and cook until just done. Then, add the fresh bean sprouts and quickly submerge them in the hot broth before removing them. (This technique, called ‘to-ryeom’ or blanching, helps keep the sprouts crisp.)
