Today, I’m sharing a recipe for ‘Tuna Tofu Stew’ using two beloved ingredients: tofu and tuna! This dish is a true ‘rice-stealer’, perfectly suited for spooning over hot rice. Experience the delicious harmony of tender tofu and savory tuna in this hearty, slightly spicy stew. Let’s get cooking!
Main Ingredients- 1 block (500g) Tofu (firm for pan-frying or stewing)
- 1 medium Onion
- 2 Korean Green Chilies (adjust for spiciness)
- 2 handfuls Scallions (approx. 100g)
- 1 can (200g) Tuna (drained)
Seasoning Sauce- 4 Tbsp Gochugaru (Korean chili flakes, approx. 30g)
- 1 Tbsp Sugar (approx. 15g)
- 1 Tbsp Minced Garlic (approx. 15g)
- 2 Tbsp Tuna Extract (or 1 Tbsp Korean soy sauce + 1 Tbsp fish sauce)
- 3 Tbsp Soy Sauce (approx. 45ml)
- 300ml Water (approx. 1.5 cups)
- 4 Tbsp Gochugaru (Korean chili flakes, approx. 30g)
- 1 Tbsp Sugar (approx. 15g)
- 1 Tbsp Minced Garlic (approx. 15g)
- 2 Tbsp Tuna Extract (or 1 Tbsp Korean soy sauce + 1 Tbsp fish sauce)
- 3 Tbsp Soy Sauce (approx. 45ml)
- 300ml Water (approx. 1.5 cups)
Cooking Instructions
Step 1
Cut the 500g block of tofu into bite-sized pieces, about 2-3cm thick. Cutting them slightly thicker will prevent them from breaking apart and improve the texture.
Step 2
Peel, wash, and thinly slice the medium onion into approximately 0.5cm thick strips.
Step 3
Remove the stems from the 2 Korean green chilies and finely chop them. Feel free to add more if you prefer it spicier.
Step 4
Wash the scallions thoroughly and chop them into roughly 5cm lengths. You can use both the white and green parts.
Step 5
In a small bowl, combine all the seasoning sauce ingredients: 4 Tbsp Gochugaru, 1 Tbsp Sugar, 1 Tbsp Minced Garlic, 2 Tbsp Tuna Extract, and 3 Tbsp Soy Sauce.
Step 6
Pour the 300ml of water into the bowl with the seasoning ingredients. Stir well with a spoon until everything is evenly combined and the sugar has dissolved.
Step 7
In a stew pot or deep pan, arrange the sliced onions at the bottom. This layer prevents the tofu from sticking and adds natural sweetness. Then, place the cut tofu pieces neatly on top of the onions.
Step 8
Sprinkle the chopped green chilies evenly over the tofu. Open the drained can of tuna and add the entire contents on top.
Step 9
Pour the prepared seasoning sauce evenly over all the ingredients in the pot, ensuring it covers everything.
Step 10
Cover the pot and bring it to a boil over high heat. Once boiling, reduce the heat to medium-low, remove the lid, and let it simmer for 10-15 minutes, allowing the sauce to thicken. Baste the tofu with the simmering sauce occasionally to help it absorb the flavors.
Step 11
When the sauce has reduced to your desired consistency and the tofu has absorbed the flavors, add all the chopped scallions. Cook for another minute, just until the scallions are slightly softened but still vibrant.
