A Delectable Bibim Dangmyeon Recipe Using Leftover Glass Noodles

I had some leftover glass noodles and decided to make Bibim Dangmyeon, which turned out so delicious that I just had to share it!

Main Ingredients

  • 2 sheets of fish cake (eomuk)
  • 1/4 carrot
  • 2 leaves of lettuce
  • 1/4 onion
  • 1/2 bell pepper (any color)
  • 1 chili pepper (optional, for extra spice)
  • 1 handful of dried glass noodles (dangmyeon, about 1 serving)
  • 1 handful of bean sprouts
  • 1 egg

Sweet and Spicy Bibim Sauce

  • 3 Tbsp gochujang (Korean chili paste)
  • 3 Tbsp vinegar
  • 2 Tbsp soy sauce
  • 1 Tbsp cooking wine (mirin, etc.)
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp plum extract (or corn syrup/oligosaccharide)
  • 0.5 Tbsp minced garlic
  • 2 Tbsp sesame oil
  • 1 Tbsp sugar
  • 1 Tbsp sesame seeds

Cooking Instructions

Step 1

First, prepare all the ingredients for the Bibim Dangmyeon. Finely julienne the carrot, onion, bell pepper, and fish cake after washing them. Cut the lettuce into bite-sized pieces. If using chili pepper, remove the seeds and thinly slice it.

The key to delicious Bibim Dangmyeon is the sauce! In a bowl, combine all the sauce ingredients: gochujang, vinegar, soy sauce, cooking wine, gochugaru, plum extract, minced garlic, sugar, sesame oil, and sesame seeds. Stir well until the sugar is dissolved. You can adjust the sugar amount to your preference.

Prepare about one serving of glass noodles. Rinse the dried glass noodles under running water to remove any dust.

Now, let’s lightly stir-fry some of the vegetables. Heat a pan without oil. Add the julienned onion, carrot, and fish cake. Stir-fry over high heat for about 1 minute, just until they are slightly softened but still crisp. Avoid overcooking, as this will release water and make them lose their crispness.

Transfer the stir-fried vegetables and fish cake to your serving bowl or a separate dish.

Time to cook the glass noodles. Boil them in plenty of water for about 10 minutes, or until translucent and tender. Drain and rinse immediately under cold water to stop the cooking and cool them down. Blanch the bean sprouts in boiling water for about 3 minutes, then rinse them in cold water to maintain their crispness. Arrange the cooked glass noodles and blanched bean sprouts over the stir-fried vegetables.
