  • 1 Red chili pepper
  • A little green part of green onion

Seasoning Ingredients

  • 1 tsp Salt
  • 1 Tbsp Perilla oil (Deulgireum)
  • 1/2 tsp Minced garlic
  • 1 Tbsp Toasted sesame seeds

Cooking Instructions

Step 1

First, prepare 300g of fresh, young perilla leaf sprouts. Place them in a large bowl. If there are tough stems attached to the leaves, carefully remove them, keeping only the tender leaves. This ensures a softer texture.

Bring a pot of water to a boil and add half a teaspoon of salt. Add the prepared perilla leaf sprouts and blanch them for just 3 seconds, flipping them quickly. Immediately remove them from the boiling water and rinse under cold running water. Gently swirl them in the cold water twice to wash away any bitterness and maintain their freshness.

Prepare one red chili pepper and the green parts of a green onion. Cut the red chili pepper in half, remove the seeds, and mince it finely. Finely chop the green onion leaves as well. Gently squeeze out excess water from the blanched perilla leaf sprouts. In the same bowl, add the minced red chili pepper and green onion, along with 1/2 teaspoon of minced garlic.

Drizzle in 1 tablespoon of perilla oil for a wonderful aroma. Add 1 tablespoon of toasted sesame seeds. Season with 1 teaspoon of salt to taste. If you prefer, you can also adjust the seasoning with soy sauce for a different savory note. (Optional: add 1/2 tsp soy sauce for extra flavor)

Now, use your hands to gently toss and mix the perilla leaf sprouts with the seasonings. Massage the ingredients together softly to ensure the aromatic perilla flavor blends well with the seasonings. Be careful not to over-mix, as this can make the leaves mushy.
