This recipe is inspired by YouTuber Chef Kim Dae-seok’s TV channel. We’re sharing a delicious braised radish dish that can be made quickly and easily using a rice cooker. You can also substitute potatoes for radish for a wonderful variation, making this recipe highly versatile! Complete your meal with this perfect side dish for rice.

Main Ingredients

  • 100g Radish (cut into 1cm thick slices)
  • 2 handfuls Minced Green Onion
  • 1/2 Cheongyang Pepper (finely chopped)
  • 0.5 Tbsp Perilla Oil

Braising Sauce

  • 150ml Water
  • 1 Tbsp Soy Sauce
  • 0.5 Tbsp Soup Soy Sauce
  • 1 tsp Garlic Powder
  • 1 tsp Sugar
  • 1 tsp Red Pepper Flakes
  • 1 Tbsp Mirin (Rice Wine)
  • 1 tsp Dried Shiitake Mushroom Powder
  • 1 tsp Dried Anchovy Powder
  • 0.25 tsp Dasida (or MSG/Umami Seasoning)

Cooking Instructions

First, prepare 100g of radish and slice it into approximately 1cm thick, bite-sized pieces. Arrange the sliced radish neatly in the inner pot of your rice cooker. That’s it for the initial preparation!

Now, let’s make the key braising sauce for this delicious dish. In a small bowl, combine 1 Tbsp soy sauce, 0.5 Tbsp soup soy sauce, 0.25 tsp Dasida, 1 tsp garlic powder, 1 tsp dried shiitake mushroom powder, 1 tsp dried anchovy powder, 1 tsp sugar, 1 tsp red pepper flakes, and 1 Tbsp mirin. Mix them well. You can adjust the amount of soy sauce or sugar according to your preference.

Pour the prepared sauce evenly over the radish in the rice cooker. Just layer it on top so the sauce can gently coat the radish.

Carefully pour 150ml of hot water (just boiled) into the rice cooker. After adding the water, select the ‘Reheat’ or ‘Cook’ function on your rice cooker and cook for 9 minutes. Don’t worry if the sauce doesn’t fully dissolve at this stage.

After 9 minutes, open the rice cooker lid and gently stir the sauce with a spatula to mix it with the radish. Add the half-chopped Cheongyang pepper and 2 handfuls of minced green onion. Then, use the ‘Reheat’ function again and cook for another 9 minutes. The spicy kick from the Cheongyang pepper and the fresh flavor of the green onion will make it even more delicious.

Finally, drizzle in 0.5 Tbsp of perilla oil and stir to finish. Your delicious braised radish is ready! The nutty aroma of perilla oil will further enhance the flavor of the dish. Serve it over warm rice and enjoy!
