  • 400g soaked soybeans (Seoritae)
  • 4 eggs

First, prepare 400g of Seoritae (Korean black soybeans). Wash them thoroughly and soak them in water for one full day. Soaking them like this will help them cook tenderly and make peeling the skins easier later on.

After soaking for a day, boil the Seoritae in plenty of water until very tender. Once the soybeans are cooked soft, gently rub them with your fingers. The skins should peel off easily. Remove all the skins. Removing the skins will result in a much smoother castella.

Place the peeled Seoritae into a blender and process until smooth. You can add a little water to help achieve a smoother consistency. For a rustic texture and to retain the nutty flavor, you can also blend it so that a slight graininess remains.

Prepare 4 eggs and separate the yolks from the whites. We’ll be making meringue for a fluffy texture. Place the egg whites in a clean bowl and set aside.

Whip the egg whites vigorously with a whisk until stiff peaks form. It’s important to whip them until they are firm and hold their shape. (Tip: If you prefer a sweeter taste, you can add an alternative sweetener like erythritol or allulose at this stage and whip it in. However, for health reasons, we recommend using minimal amounts or omitting it.)

In a separate bowl, lightly whisk the egg yolks until they are smooth and well combined. Ensure there are no lumps.

Add the whisked egg yolks to the stiff meringue. Gently fold them together using a spatula, being careful not to deflate the meringue. Use a folding motion, scraping from the bottom of the bowl upwards. (Tip: If you are concerned about any eggy smell, you can add 1 tablespoon of milk powder or a drop of vanilla extract to help neutralize the smell and enhance the flavor.)

Finally, add the blended Seoritae mixture to the yolk and meringue mixture. Fold it in quickly and lightly, using the spatula to maintain as much airiness as possible. The goal is to combine the ingredients without losing the fluffy texture of the meringue. You’ll have a nutty batter with the texture of the soybeans.

Pour the batter into the inner pot of your rice cooker. Use the ‘Steam’ or ‘Cook’ function and set it to cook for 40 minutes. The exact function may vary depending on your rice cooker, so look for a steam or cooking setting. Once done, insert a toothpick; if it comes out clean, the castella is ready.
