Hearty Green Pepper Burrito
A Filling and Immunity-Boosting Meal: Delicious Green Pepper Burrito
This is a satisfying burrito where fresh green peppers cut through the richness, making it a delightful meal. You can make a batch, freeze them, and then simply microwave them for a quick breakfast or bake them in the oven for an even more substantial start to your day.
Main Ingredients- 100g green bell peppers (about 2-3 peppers)
- 1/2 medium onion
- 100g ground pork
- 5g salt (approx. 1 tsp)
- 5g black pepper (approx. 1 tsp)
- 200g water (approx. 1 cup)
- 15g chicken powder (approx. 1.5 tbsp)
- 20g tomato paste (approx. 1.5 tbsp)
- 200g baked beans (approx. 1 cup)
- 300g cooked rice (approx. 1.5 bowls)
- 5 tortillas
- 30g butter (approx. 2 tbsp)
- 300g mozzarella cheese (approx. 1.5 cups)
Cooking Instructions
Step 1
Wash the green bell peppers thoroughly, cut them in half lengthwise, and remove the seeds. Removing the seeds will reduce the spiciness, allowing for a milder flavor.
Step 2
Finely mince the deseeded green bell peppers and the onion. Mincing them finely ensures they blend well during cooking and create a richer filling.
Step 3
Melt the butter in a pan over medium heat. Once melted, add the minced green peppers and onion and sauté until they become translucent and fragrant.

Add the ground pork to the pan, breaking it up with your spatula so it cooks evenly. Once the pork is almost cooked through, season with salt and pepper and continue to cook. This step helps to remove any gamey smell from the pork.

Pour in the water, chicken powder, and tomato paste. Stir well to combine all the ingredients. Simmer briefly to allow the sauce to thicken slightly.

Add the cooked rice and stir until it’s well combined with the sauce and other ingredients. Once the rice is heated through, turn off the heat and gently stir in the baked beans. The creamy texture and sweetness of the baked beans will add another layer of flavor to the burrito filling.

Warm a tortilla slightly. Place a generous amount of the rice mixture onto the center of the tortilla. Sprinkle about two pinches of mozzarella cheese over the filling. Fold in the sides of the tortilla, then fold up the bottom edge and roll it up tightly to enclose the filling. Rolling it tightly is important to prevent the filling from spilling out while cooking.

Lightly grease a pan with a little extra butter (not included in the ingredient list) over low heat. Place the rolled burrito seam-side down in the pan. Cook until golden brown and crispy on all sides, turning occasionally to ensure even browning. Your delicious burrito is now ready!
