  • 5 crab sticks (shredded to resemble crab meat)
  • 1/2 onion (finely diced)
  • 1/5 carrot (finely diced, similar to the onion)
  • 1 green onion (split lengthwise and finely chopped)
  • 2 eggs (lightly seasoned with a pinch of salt and beaten)
  • 2 bowls of cooked rice (warm)
  • 1.5 Tbsp minced garlic
  • 3 dried Vietnamese chili peppers (crushed)

Seasoning

  • 1 Tbsp oyster sauce
  • 1 Tbsp soy sauce
  • 2 pinches of sea salt
  • 2 pinches of black pepper

First, prepare the green onion by splitting it lengthwise and then chopping it finely. This helps to release its aromatic oils, adding a wonderful fragrance to the fried rice.

Next, finely dice the onion. Dicing it small will ensure it cooks evenly and blends seamlessly with the rice.
