Ingredients

  • 1 pack Silken Tofu
  • 3 Eggs
  • A little Green Onion
  • 1 Green Chili Pepper
  • 1 Red Chili Pepper
  • 1/2 Onion
  • 1/2 Tbsp Salted Shrimp Paste
  • 4 cups Water
  • 1 tsp Salt
  • A pinch of Black Pepper

Cooking Instructions

First, thinly slice the 1/2 onion. The onion’s sweetness will subtly infuse into the broth, adding depth and flavor.

Get a pot of a suitable size ready.

Pour 4 cups (about 800ml) of water into the pot along with the sliced onions. This forms the base for a clear and refreshing broth.

Prepare the 1 pack of silken tofu. Gently press the package to make it easier to remove the contents.

Carefully scoop out the silken tofu with a spoon and gently place it into the pot. Try not to stir too much; preserving its soft texture is key.

Add 1/2 Tbsp of salted shrimp paste. Using only the liquid from the shrimp paste will create a cleaner and deeper umami flavor. If you don’t have it, you can substitute with soy sauce or fish sauce.

Bring the contents of the pot to a simmer over medium heat. Once the onions become translucent and the tofu starts to boil, let it simmer for a bit to allow the flavors to meld. Simmer for about 3-5 minutes.

Prepare the 3 eggs by cracking them into a bowl.

Using a whisk or chopsticks, gently beat the eggs until the yolks and whites are well combined. Avoid over-whisking, as it can cause the eggs to clump when added to the soup.

Slowly drizzle the beaten eggs in a thin, circular motion over the simmering tofu soup. Keep the heat low at this stage. Don’t stir immediately; wait a moment for the eggs to cook and form delicate ribbons.

Season the soup with 1 tsp of soy sauce or salt. Remember that the shrimp paste has already added some saltiness, so taste and adjust as needed.

Finally, add a pinch of black pepper for aroma. Adjust seasoning with more salt or soy sauce to your preference.

Wash and thinly slice the green onion. This will add color and a refreshing aroma.

Remove the seeds from the green and red chili peppers and slice them thinly. Add them if you desire a touch of heat and vibrant color. You can omit them if you don’t like spicy food.

Briefly simmer the soup for about 1 minute, just enough for the flavors of the chili and green onion to infuse into the broth. Don’t overcook.

Turn off the heat and let it sit for a moment before tasting. If the seasoning is not quite right, add a little more salt or soy sauce to achieve the perfect balance. Ladle the warm silken tofu and egg soup into bowls and enjoy!
