Main Ingredients

  • 3/4 cup milk (approx. 150ml)
  • 2 fresh eggs
  • About 7 shrimp (cocktail or raw, peeled and deveined)
  • 1 handful of blanched broccoli (cut into small florets)
  • 1/4 fresh onion (very finely minced)

Seasoning

  • 1 Tbsp cooking wine (like Mirin, to remove shrimp odor)
  • 2/3 tsp salted shrimp paste (including liquid, finely minced)

Cooking Instructions

Step 1

In a wide bowl, crack 2 fresh eggs. Pour in 3/4 cup (approx. 150ml) of milk. Gently whisk with a whisk until the eggs are smoothly combined and there are no lumps. Whisking with a whisk rather than chopsticks will result in a softer texture.

To the whisked egg mixture, add 1 handful of finely chopped broccoli, 1/4 cup of very finely minced onion, 1 Tbsp of cooking wine, and 2/3 tsp of minced salted shrimp paste. Mix well. Using salted shrimp paste adds a wonderful savory depth of flavor. If your salted shrimp paste is very salty, adjust the amount accordingly.

Add about 7 prepared shrimp to the mixture and stir gently. You don’t need to cut the shrimp too small. As the egg custard cooks, the delicious juices from the shrimp will infuse into it, adding even more flavor.

Place the bowl containing the egg mixture into a steamer with boiling water. Cover with a lid and steam over medium-low heat for about 10-15 minutes. To check for doneness, insert a toothpick; if it comes out clean, it’s ready. Be careful not to overcook, as it can become mushy. Enjoy your tender steamed egg custard!
