Crispy & Juicy! Super Easy Shrimp Spring Roll Wraps
Want restaurant-quality crispy shrimp without the fuss? This simple method is your secret!
Inspired by a delicious dish I discovered at a restaurant during my trip to the US, I’ve adapted this recipe for your home kitchen. With just spring roll wrappers and fresh shrimp, you can create impressive shrimp fritters effortlessly, skipping the traditional breading process. Experience the perfect contrast of a satisfyingly crisp exterior and a succulent, tender shrimp inside!
Main Ingredients- 14 spring roll wrappers
- 10 large shrimp
- 1 Tbsp all-purpose flour
- 2 Tbsp water
Shrimp Marinade- 1 Tbsp cooking sake (or mirin)
- 1 Tbsp cornstarch (or potato starch)
- 1 Tbsp cooking sake (or mirin)
- 1 Tbsp cornstarch (or potato starch)
Cooking Instructions
Step 1
The stars of this recipe are simple: spring roll wrappers and fresh large shrimp! Using plump, meaty shrimp will significantly enhance the texture and flavor. While they might seem a bit pricey, the delicious outcome is absolutely worth it.
Step 2
First, peel the shrimp cleanly. Making a shallow cut along the back will make peeling much easier. Ensure the deveining is also done for a clean bite.
Step 3
Add 1 tablespoon of cooking sake (or mirin) to the prepared shrimp. Sake is excellent for eliminating any potential fishy odors and infusing a wonderful aroma.
Step 4
Next, sprinkle 1 tablespoon of cornstarch (or potato starch) evenly over the shrimp. The starch helps to keep the shrimp moist on the inside and contributes to a crispier exterior when fried.
Step 5
Using chopsticks, gently toss the shrimp to coat them evenly with the sake and starch. Be careful not to overmix, as this can make the shrimp mushy.
Step 6
Now, let’s prepare the batter base. Mix 1 tablespoon of flour with 2 tablespoons of water, creating a 1:2 ratio. Aim for a consistency that’s neither too thick nor too thin.
Step 7
Carefully separate the spring roll wrappers. Brush each wrapper evenly with the flour-water mixture. This will help the shrimp adhere to the wrapper and ensure a crispier finish when fried.
Step 8
Place a marinated shrimp onto the brushed wrapper. Roll it up tightly, like making a sushi roll. Ensure the shrimp is securely enclosed within the wrapper.
Step 9
You can roll them into long, cylindrical shapes like this,
Step 10
or place a shrimp at a corner of the wrapper and roll it up to create a smaller, more compact shape, similar to a mini spring roll.
Step 11
Feel free to shape them however you prefer! These make for delightful snacks for kids or appetizers for gatherings.
Step 12
Heat oil in a pan to about 350°F (175°C). Carefully place the wrapped shrimp into the hot oil and fry until golden brown and crispy, about 3-4 minutes. Turn them occasionally to ensure even cooking and prevent burning.
Step 13
And there you have it – perfectly crispy on the outside, juicy and tender on the inside shrimp fritters! It’s amazing how you can achieve such a delicious result without the traditional flour-egg-breadcrumb coating. Next time, I might try rolling them with a cheese stick inside. Happy cooking!
