  • 3 Tbsp curry powder
  • 1 cup water (using a typical Korean paper cup, approx. 200ml)

Rinse the chicken thoroughly and pat it dry. In a bowl, gently massage the chicken with minced garlic, salt, and pepper. Let it marinate for about 10-15 minutes to allow the flavors to penetrate.

Evenly coat the marinated chicken with all-purpose flour. Gently press the flour onto the chicken surface to ensure it adheres well. This step contributes to the final crispiness.

In a separate bowl, combine the flour and curry powder for the batter. Gradually add 1 cup of water (approx. 200ml) while whisking until you achieve a smooth batter consistency that will coat the chicken well. Ensure there are no lumps; a smooth batter is key.

Now, it’s time to batter the chicken. Dip the flour-coated chicken into the prepared batter, ensuring it’s evenly coated. Place the battered chicken into a preheated pot over medium heat. Since we’re roasting the chicken in the pot rather than deep-frying, using a pot with a generous capacity or good depth is recommended.

To prevent steam from escaping through the lid’s vent and to help make the coating crispier, dampen a paper towel with water and gently cover the vent. Be careful not to seal it too tightly.

Roast the chicken on one side for about 5 minutes over medium heat until golden brown. Once the surface starts to cook, carefully flip the chicken to brown the other side. Continue roasting for a total of 15-20 minutes, flipping occasionally, until the chicken is cooked through. To check for doneness, insert a skewer into the thickest part; the juices should run clear.
