Welcome to May, the month of family celebrations! Today, we’re making a super popular ‘Cheesy Corn Bake’ that kids absolutely adore! This delightful dish features sweet corn topped with generous amounts of savory, melted cheese. It’s incredibly versatile – you can prepare it in the microwave, air fryer, or even directly over heat. For an extra special texture, we highly recommend cooking it in a cast-iron skillet over direct heat for a crispy exterior and a gooey, moist interior. It’s crucial to drain the canned corn very well to prevent excess liquid and ensure a richer flavor. We’ve added finely diced bell peppers (red and yellow for vibrant color!) and onions for a lovely texture and visual appeal, similar to how they’re used in fried rice. For an even more decadent cheesy experience, feel free to add shredded cheddar cheese along with the mozzarella. This simple yet incredibly satisfying combination makes it a perfect centerpiece for Children’s Day or a delightful snack for kids!

  • 2 Tbsp Red Bell Pepper, finely diced
  • 2 Tbsp Yellow Bell Pepper, finely diced
  • 2 Tbsp Onion, finely diced
  • 4 Tbsp Mayonnaise
  • 1 Tbsp Sugar
  • Generous amount of Mozzarella Cheese
  • 1 slice Cheddar Cheese

Cooking Instructions

Drain the canned corn thoroughly using a sieve. It’s important to remove as much liquid as possible to prevent the dish from becoming watery at the end.

Finely dice the red bell pepper, yellow bell pepper, and onion to a size similar to what you’d use in fried rice. While you can use any leftover vegetables, the colorful bell peppers will make your cheesy corn visually appealing.
