When you buy a radish, you often end up with more than you expect! I love using it for braised fish or hearty soups. Today, I’m sharing my recipe for a classic Beef Radish Soup (So-gogi Mu-guk). It’s wonderfully mild and satisfying, perfect for even picky eaters! This comforting soup is a fantastic way to use up that radish.

Main Ingredients

  • 100g beef for soup (e.g., brisket, shank)
  • 1 piece of radish (about 2 finger-widths thick)
  • 1/2 stalk green onion (to taste)

Cooking Instructions

Step 1

Gently pat the blood from the 100g of beef for soup using paper towels. Then, cut the beef into bite-sized pieces, about 2-3cm each.

Peel and wash the piece of radish. Slice it thinly, about 0.5cm thick, or cut it into bite-sized cubes or strips for easier eating, especially for children.

Heat 2-3 tablespoons of sesame oil in a pot over medium heat. Add the sliced beef and radish and stir-fry for about 2-3 minutes until the beef changes color and the radish begins to glisten. *If your radish isn’t very sweet, you can add a tiny pinch of sugar (about 1/2 tsp) during this step to enhance its natural sweetness.

Once the beef is no longer pink and the radish starts to look translucent, pour in 1.5L of water (or broth). Ensure there’s enough liquid to generously cover all the ingredients.

Add 1 tablespoon of minced garlic. This will add a wonderful aromatic depth to the soup.

Stir in 1 tablespoon of soup soy sauce (Guk-ganjang) for a savory umami flavor. Bring the soup to a rolling boil over medium-high heat and let it simmer vigorously for at least 15 minutes. Boiling for a good amount of time is key to developing a clear and refreshing broth.

Finally, add the chopped green onions and simmer for another minute. Your delicious Beef Radish Soup is ready! Notice how the broth has become rich and flavorful from simmering.
