I bought a bunch of fresh chives on sale and decided to make a delicious geotjeori! It’s a simple yet appetite-stimulating side dish that pairs perfectly with any meal.

Main Ingredients

  • 2 bunches (approx. 200-250g) fresh chives

Seasoning

  • 2 Tbsp soy sauce (or soup soy sauce)
  • 1 tsp fine gochugaru (Korean chili flakes)
  • 1 Tbsp sesame oil
  • 1 tsp toasted sesame seeds

Cooking Instructions

First, wash the chives thoroughly under running water. Trim off any wilted leaves or blemishes, and lightly trim the roots for a cleaner presentation. Shake off excess water or gently pat them dry with a paper towel. Then, cut the chives into bite-sized pieces, about 5-7 cm long. Cutting them too long can make them difficult to eat.

Place all the cut chives into a large bowl. Now it’s time to add the basic seasonings. First, evenly drizzle 2 tablespoons of soy sauce over the chives. You can use regular soy sauce, or if you prefer a cleaner taste, soup soy sauce (guk-ganjang) works well too.

Next, add 1 tablespoon of sesame oil to impart a nutty aroma. Using fresh, aromatic sesame oil will enhance the flavor of the salad.

Add 1 teaspoon of fine gochugaru (Korean chili flakes) for a touch of spice and vibrant color. If you enjoy a spicier kick, you can add a little more. However, be mindful not to add too much, as it can overpower the delicate flavor of the chives. Moderation is key here.

Finally, sprinkle 1 teaspoon of toasted sesame seeds over the mixture for added nutty flavor. For an even richer sesame taste, you can lightly crush the seeds before adding them.

Now, gently toss everything together to coat the chives evenly with the seasonings. Chives are delicate vegetables, so avoid over-mixing, which can result in a raw, grassy taste. Mix them gently with your fingertips, as if handling a delicate item. Once everything is well combined, your delicious chives geotjeori is ready! It’s wonderful to enjoy immediately, or you can chill it in the refrigerator for a short while to enjoy an even crispier texture.
