Pasta Ingredients

  • Spaghetti noodles 400g
  • Salt 4 Tbsp (for boiling pasta)
  • Olive oil 5 Tbsp (for coating noodles and sautéing)
  • Garlic cloves 9
  • Onion 280g (approx. 1 medium onion)
  • Button mushrooms 3
  • Bacon 80g
  • Dried chili peppers 2
  • Cherry tomatoes 9
  • Clams (shelled) 180g
  • Jarred spaghetti sauce 800g
  • Pasta water 3/4 paper cup (approx. 120ml)
  • Water 4L (for boiling pasta)

Cooking Instructions

Step 1

First, bring 4 liters of water to a rolling boil. Once boiling vigorously, add 4 tablespoons of salt and stir to dissolve. This seasons the pasta from within. Add 400g of spaghetti noodles and cook for about 7-8 minutes, stirring occasionally to prevent them from sticking together.

Drain the cooked pasta using a colander. While still warm, drizzle 2 tablespoons of olive oil over the noodles and toss gently to coat. This step is crucial to prevent the pasta from becoming mushy or clumping, ensuring it’s perfectly ready to be mixed with the sauce.

Now, let’s prepare the vegetables. Thinly slice 9 cloves of garlic. Finely chop 280g of onion (about 1 medium onion). Slice 3 button mushrooms thinly for a pleasant texture.

Rinse 80g of bacon under hot water to remove any impurities, then cut it into approximately 1cm pieces. Thinly slice 2 dried chili peppers with scissors to add a touch of heat. Halve 9 cherry tomatoes.

Heat a deep pan over medium heat and add 3 tablespoons of olive oil. Add the sliced garlic and sauté until fragrant. Then, add the chopped onion and cook until translucent. Follow by adding the prepared bacon, dried chilies, and 180g of shelled clams, stirring to cook them together.

Pour in 800g of the jarred tomato spaghetti sauce and mix well with the other ingredients. Add the halved cherry tomatoes, 3/4 paper cup (about 120ml) of the reserved pasta water, and the sliced mushrooms. Stir everything together and bring to a simmer. Cook until the sauce has slightly thickened.

Add the pre-cooked spaghetti noodles to the sauce. Toss gently to ensure the noodles are evenly coated with the sauce. Continue to cook and stir for another 1-2 minutes, allowing the pasta and sauce to meld beautifully.
