Ham is the easiest and quickest option when you’re out of side dishes! However, as a processed food, it’s natural to feel a little guilty about eating it. Instead of just pan-frying the ham, coating it in egg and adding vegetables makes it feel less regrettable and much more delicious and nutritious. This recipe introduces a simple yet satisfying ham and vegetable pancake that’s perfect as a quick meal or a snack.

Main Ingredients

  • 300g Ham (choose your preferred type)
  • 1/4 Onion
  • 1/8 Carrot
  • 1/3 Green Onion (or scallions)
  • 2 Eggs
  • Cooking Oil (for frying)

Seasoning

  • Pinch of Salt (optional, adjust based on ham’s saltiness)
  • Pinch of Black Pepper (optional)

Cooking Instructions

First, prepare the vegetables. Wash and peel/trim the onion, carrot, and green onion. Finely mince them into pieces similar in size to the ham, or slightly smaller. Mincing the vegetables finely helps them mix well with the egg batter and distribute evenly in the pancake, making it more appealing.

In a bowl, crack the 2 eggs and whisk them well. Add all the finely minced onion, carrot, and green onion to the bowl and mix. You can optionally add a tiny pinch of salt and pepper for seasoning, but since ham is already salty, it’s best to omit or use very little. Ensure the egg batter is well combined with the vegetables.

Cut the ham into bite-sized pieces. You can slice them into squares or half-moons. Dip each piece of ham into the prepared egg and vegetable mixture, ensuring it’s coated evenly. Heat cooking oil in a pan over medium-low heat. Place the egg-coated ham pieces in the hot oil and pan-fry, flipping occasionally, until golden brown and cooked through. Your delicious ham and vegetable pancake is now ready! Enjoy it warm for a crispy exterior and a tender interior.
