  • 150g fresh bean sprouts
  • 2/3 large scallion (green onion), thinly sliced
  • 1 Tbsp soy sauce
  • 0.5 Tbsp minced garlic (approx. 1/2 tsp)
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp oyster sauce
  • 1 Tbsp oligo syrup (or corn syrup/honey)
  • 1 Tbsp cooking oil
  • 1 Tbsp sesame seeds (toasted)
  • 1 Tbsp sesame oil

Cooking Instructions

First, rinse the 150g of bean sprouts thoroughly under cold running water. After rinsing, drain them completely in a colander. It’s crucial to remove excess water, as it can make the sprouts soggy or watery when stir-fried.

Wash the 2/3 large scallion, then thinly slice it into fine strips, including both the white and green parts. Try to match the length of the bean sprouts for a harmonious presentation.

Heat a pan over medium-high heat. Add the drained bean sprouts and 1 Tbsp of cooking oil. Stir-fry quickly for 1-2 minutes until the bean sprouts just start to soften. This quick sauté helps to eliminate any ‘fishy’ smell often associated with bean sprouts.

As the bean sprouts begin to cook, add 1 Tbsp soy sauce, 0.5 Tbsp minced garlic, and 1 Tbsp gochugaru. Stir-fry rapidly over high heat to prevent the seasonings from burning. The key is to toss everything quickly to coat evenly.

Next, add 1 Tbsp of oyster sauce for an extra layer of umami flavor. Continue to stir-fry for about 1 minute, gently mixing with a spatula, allowing the sauce to coat the bean sprouts uniformly.

Add the pre-sliced scallions to the pan. Toss them with the bean sprouts for about 30 seconds, just until they are slightly tender but still retain their crispness. You want to maintain the delightful crunch of the scallions.

Give it a final quick toss for about 10 seconds to combine everything. Turn off the heat and let the residual heat finish the cooking. Serve immediately over warm rice for a delicious meal!
