Main Ingredients- Tomato Sauce 2 cups (standard paper cup)
- Cherry Tomatoes 4-5 pcs
- King Oyster Mushrooms 2 pcs
- Tofu Skin (Dou Fu Pi) 5-6 sheets
- Onion 1/2 pc
- Minced Garlic 1 Tbsp
- Chicken Breast 1 pc
- Greek Yogurt 5 Tbsp
Cooking Instructions
Step 1
First, prepare the vegetables. Finely mince the onion. Slice the king oyster mushrooms into 1cm thick rounds, or cut them along their natural shape for a better texture.
Step 2
Wash the cherry tomatoes, remove their stems, and then cut them into quarters.
Step 3
Warm the chicken breast in the microwave for about 1-2 minutes. Once warm, shred the chicken breast along its grain by hand for a tender and satisfying texture.
Step 4
Melt butter (or olive oil) in a heated pan. Add the minced garlic and minced onion, and sauté over medium-low heat until the onion becomes translucent and lightly golden, releasing its aroma.
Step 5
Pour the store-bought tomato sauce into the pan with the sautéed onions. Add the quartered cherry tomatoes and bring to a simmer. Cook until the sauce thickens slightly.
Step 6
Once the sauce begins to bubble, add the prepared king oyster mushrooms and the shredded chicken breast. Stir well to combine with the sauce and cook for another 1-2 minutes.
Step 7
Finally, sprinkle with black pepper to enhance the sauce’s flavor. (You can add salt to taste if desired.)

Prepare your gratin dish. Place a layer of tofu skin at the bottom, then spread a thin layer of Greek yogurt over it. Generously spoon the cooked tomato sauce mixture with vegetables and chicken on top. Repeat this layering process 2-3 times. Finish by covering the top generously with shredded mozzarella cheese.
Step 9
Bake in a preheated air fryer or oven at 200℃ (390℉) for 5-7 minutes, or until the cheese is melted and golden brown. Serve immediately while warm!
