Here’s a recipe for a wonderfully refreshing crab stew that’s perfect for special occasions or as a hangover cure! By utilizing marinated crabs, you can easily create a dish bursting with deep, savory flavors. The umami from the crab marinade and the rich broth will create an unforgettable taste.
Main Ingredients- 1 piece radish (approx. 100g)
- 1 cabbage leaf
- 1/4 onion
- 1/2 king oyster mushroom
- 4-5 marinated crabs (marinade can be used)
- 150g firm tofu
- 1 hot pepper (e.g., Cheongyang pepper)
- 1/2 stalk green onion
Seasoning & Broth- 1/2 Tbsp minced ginger
- 1/2 Tbsp minced garlic
- 1 Tbsp chili powder (Gochugaru)
- 800ml (4 cups) water
- Pinch of salt (for seasoning)

Cooking Instructions
Step 1
In a pot, combine the thinly sliced radish and 800ml (4 cups) of water. Bring to a boil over high heat. Let it simmer for about 5-7 minutes until the radish becomes translucent and the broth develops a rich flavor.

While the radish is cooking, chop the cabbage into bite-sized pieces and slice the onion into strips. Slice the king oyster mushroom into 2-3 pieces.

Once the radish is partially cooked, add the marinated crabs to the pot. For an extra boost of umami, feel free to add 1-2 tablespoons of the crab marinade liquid. As it comes to a boil, skim off any foam that rises to the surface for a cleaner-tasting broth.

Thinly slice the hot pepper diagonally for a touch of heat. Julien the green onion. Have your minced garlic, minced ginger, and chili powder measured and ready for easy addition.

When the crabs are cooking and the broth is flavorful, add the chopped cabbage, sliced onion, and prepared king oyster mushrooms. Stir in the minced garlic, minced ginger, and chili powder, ensuring the seasonings are well combined.
