  • 2 bowls of cooked rice
  • Cooking oil
  • 2.5 Tbsp oyster sauce
  • 0.5 Tbsp sesame oil

First, prepare the scallions. Finely chop them, focusing on the white and light green stems. For a 2-serving portion, about one large scallion stalk should suffice. Chopping them well ensures their aromatic flavor distributes evenly throughout the rice.

For the golden fried rice, we need 4 eggs. Crack them into a bowl and whisk thoroughly until the yolks and whites are fully combined and slightly frothy. This ensures a uniform texture when cooked.

Add 2 bowls of freshly cooked, warm rice to the whisked eggs. Gently mix the rice with the egg using your hands, ensuring each grain is coated. The more you mix and separate the rice grains here, the prettier and more golden your final fried rice will be.

Heat a generous amount of cooking oil in a pan over medium-low heat. Add all the chopped scallions to the hot oil. Stir-fry for about 30 seconds to 1 minute, or until fragrant and lightly golden, to create aromatic scallion oil. This step is crucial for building flavor.

Push the scallions to one side of the pan. Add the egg-coated rice to the empty space. Let the egg cook undisturbed for a moment until it starts to set around the edges. Then, gently stir-fry the rice mixture. Cooking the egg separately first prevents it from sticking messily to the scallions and helps separate the rice grains.

Once the egg is about 70-80% cooked and has formed soft curds, mix it thoroughly with the scallions. Increase the heat to medium-high and continue to stir-fry the rice until it becomes fluffy and dry, with individual grains separated. This ensures a ‘gushi gushi’ (fluffy and distinct grain) texture.

When the rice is sufficiently fluffy, turn off the heat briefly or reduce it to very low. Add 2.5 tablespoons of oyster sauce. Mix well to coat the rice and ingredients evenly. After mixing, turn the heat back up to high and stir-fry for about 30 seconds to enhance the oyster sauce’s savory flavor.

Finally, turn off the heat. Drizzle in 0.5 tablespoon of sesame oil and sprinkle 2-3 times with black pepper to taste. Give it one final mix to ensure all the flavors are well combined.
