Main Ingredients- 15 Whiteleg shrimp
- 1/2 Onion
- 1/4 Block firm tofu
- 1 Piece of daikon radish (approx. 10 cm long)
- 2 Korean chili peppers (cheongyang)
- 1 Red chili pepper
- 3-4 Pieces of dried kelp (dashima)
Seasoning- 1 Tbsp Korean chili powder (gochugaru)
- 1 Tbsp minced garlic
- 1 Tbsp soy sauce for soup (jipganjang)

Cooking Instructions
Step 1
First, prepare all the ingredients for the shrimp stew by washing and trimming them thoroughly.
Step 2
For the whiteleg shrimp, use scissors to trim off only the antennae. This makes the stew more pleasant to eat.

Rinse the prepared shrimp under running water about twice to ensure they are clean. Set aside.

Get a pot ready, fill it with ample water, and add the dried kelp. The kelp will contribute a deep umami flavor to the broth.

Cut the daikon radish into four pieces, each about 10 cm long. Then, slice them thinly. Thin slices will allow the radish’s refreshing flavor to infuse into the broth more effectively.

Add the sliced daikon radish to the pot along with the kelp. It will cook and release its refreshing taste into the stew.

Prepare the vegetables by slicing them. Halve the onion and slice it into thick shreds. Slice the green onions diagonally. Thinly slice the red and Korean chili peppers to add color and a touch of heat.

Now, place the pot over medium-high heat and bring the water to a rolling boil. It’s important to boil it long enough for the radish to release its refreshing essence.

Once the broth starts boiling vigorously, add all the prepared whiteleg shrimp. Be careful not to overcook the shrimp, as they can become tough.

When the stew comes to another boil, remove the kelp pieces that were added earlier. Leaving the kelp in for too long can result in a slimy texture.

Finally, add the cubed tofu and the sliced red and Korean chili peppers. Let it simmer briefly to allow the flavors to meld. The chili peppers will make the broth even more refreshing and spicy.
