  • 100g fresh field cress (naengi)
  • 1/3 Tbsp doenjang (Korean soybean paste)
  • 1 small clove garlic, minced
  • Scallion, finely chopped (about the same amount as garlic)
  • 1 tsp toasted sesame seeds
  • 1 tsp sesame oil
  • Soy sauce (for final seasoning adjustment)

Cooking Instructions

Begin by thoroughly washing the fresh field cress under running water. It’s important to rinse it carefully to remove any soil or impurities. Once cleaned, soak the field cress in clean, cool water for about 5 minutes. This helps to loosen any remaining dirt and makes the cress more vibrant. After soaking, rinse it several times again and gently squeeze out excess water.

Bring a generous amount of water to a rolling boil in a pot. Blanching the greens in well-boiling water is key to maintaining their crisp texture and preventing them from becoming mushy.

Once the water is boiling, carefully add the prepared field cress and blanch for approximately 30 seconds. Be cautious not to overcook, as this can diminish the cress’s delicate aroma and crispness. Immediately remove the blanched cress and rinse it under cold running water to stop the cooking process. Gently squeeze out any remaining water. Avoid squeezing too hard, which can break the delicate leaves.

Place the squeezed field cress into a mixing bowl. Add the seasoning ingredients: doenjang, minced garlic, chopped scallions, toasted sesame seeds, and sesame oil. Gently toss and mix everything together with your hands, like you’re ‘massaging’ the ingredients into the cress. Be sure to mix gently to avoid mashing the delicate leaves. Ensure the seasoning is evenly distributed.

Finally, adjust the seasoning with soy sauce to your personal taste. Since doenjang already has a salty component, it’s best to add soy sauce gradually while tasting.
