This time, we’ll be making a rich and creamy potato salad by combining tender boiled potatoes with hard-boiled eggs and plenty of fresh vegetables. Adding a generous amount of mayonnaise enhances the nutty flavor and smooth texture, creating an irresistible taste that you’ll want to scoop up with a spoon!   • 2-4 eggs
  • 1/2 cucumber
  • 1 handful cabbage (approx. 50g)
  • 1/4 small onion
  • 100g sliced ham or bacon
  • 2 imitation crab sticks (surimi)

First, let’s perfectly hard-boil the eggs. Fill a pot with plenty of water and bring it to a boil. Once boiling, add 1/2 tsp salt and 1 tsp vinegar. Adding vinegar helps the eggshells peel off easily later, which is very convenient. Gently place the eggs into the boiling water and boil for exactly 7 minutes for a moist, soft-boiled result. If you prefer fully hard-boiled eggs, boil for an additional 8-10 minutes. Once boiled, rinse the eggs under cold water, let them cool, and then peel them.

Now, it’s time to boil the delicious potatoes. Add enough water to cover the potatoes and bring it to a boil. Once the water is boiling, add the potatoes and 1/2 tsp of salt. The best way to check if the potatoes are cooked is by inserting a chopstick – if it goes in smoothly and without resistance, they are perfectly cooked. Medium-sized potatoes typically take about 15-20 minutes to cook through.

While the potatoes and eggs are boiling, prepare the other ingredients for the salad. Thinly slice the cucumber and then finely dice it. Finely shred the cabbage to a similar size. Mince the onion very finely to reduce its sharpness. Dice the ham or imitation crab sticks into bite-sized pieces. Feel free to adjust or omit ingredients like cucumber, cabbage, onion, ham, and imitation crab according to your preference. Make sure to wash all fresh vegetables thoroughly before use.

Carefully peel the skin off the boiled potatoes while they are still warm. Transfer the peeled potatoes to a large bowl. Using the back of a spoon, mash the potatoes. While chopping them with a knife is an option, mashing them while warm with a spoon is much quicker and easier, resulting in a wonderfully smooth texture without large lumps.

Now, add all the prepared ingredients – the boiled eggs, diced cucumber, cabbage, onion, ham, and imitation crab sticks – to the bowl with the mashed potatoes. Next, add the key ingredient for flavor: 8 to 10 tablespoons of mayonnaise. The amount of mayonnaise can be adjusted based on the quantity of potatoes and your personal preference.

Finally, it’s time to add the seasonings to balance the flavors. Add a pinch of salt and 1 teaspoon of sugar for a touch of sweetness and depth. For an extra aromatic boost, freshly ground black pepper can be added if desired. Now, gently mix all the ingredients together until well combined. Use a spoon or spatula to mix everything smoothly.
