Rice Ingredients

  • 4 servings of rice (approx. 2 cups)
  • 2 cups prepared burdock root (approx. 200g)
  • 3-4 fresh mushrooms (e.g., shiitake, oyster)
  • 1/3 carrot (approx. 50g)
  • 3 sheets of dried kelp
  • 2 Tbsp soy sauce for soup
  • 2 Tbsp perilla oil

Wild Chive Sauce Ingredients

  • 1 pack fresh wild chives (approx. 100g)
  • 10 Tbsp soy sauce
  • 2 Tbsp sugar or corn syrup
  • 2 red chili peppers
  • 1-2 Tbsp red pepper flakes (adjust to taste)
  • A pinch of toasted sesame seeds
  • A little sesame oil

Cooking Instructions

Step 1

First, wash the rice thoroughly. Then, transfer the rice to your rice cooker and add water. It’s best to use slightly less water than you normally would, about 3/4 of your usual amount, to achieve a perfectly fluffy texture.

Peel the burdock root and julienne it into thin strips. To remove any bitterness, soak the julienned burdock in water with a splash of vinegar for about 10 minutes. Rinse it thoroughly under cold water several times until clean.

In the rice cooker, arrange the drained burdock root, the sliced mushrooms, and the julienned carrots over the rice. You can also tuck in a few pieces of kelp to add extra umami to the rice while it cooks.

Drizzle 2 tablespoons of soy sauce for soup and 2 tablespoons of perilla oil over the ingredients. Close the lid of the rice cooker. You can either start cooking immediately or let the rice soak for 20-30 minutes for an even richer flavor (soaking is optional).

Mix well to create a flavorful wild chive sauce. This sauce is so good, you might need an extra bowl of rice!
