Step 1
Here are the ingredients prepared for making nutritious pine nut porridge. Using a mix of sweet rice and regular rice adds a wonderful balance of chewiness and tenderness to the porridge.

Wash the rice mixture (sweet rice and white rice) 3-4 times under running water until the water runs clear. Then, soak the washed rice in cool water for about 1 hour. This helps the rice grains soften, making it easier to achieve a smooth porridge consistency. After soaking, drain the rice thoroughly in a sieve.

Transfer the soaked rice to a deep bowl suitable for blending. Add enough water to cover the rice grains.

Using an immersion blender or a regular blender, process the rice until smooth. For a pleasant texture, it’s recommended not to blend it completely to a paste, but to leave some very small, soft rice particles intact for a slightly chewy feel.

Don’t worry if it seems too thick at this stage; the porridge will thin out when the pine nuts are added. Also, pine nut porridge tends to thicken further as it cools, so aim for a slightly thicker consistency when cooked.

When the rice grains have broken down and the porridge has reached your desired base consistency, it’s time to add the blended pine nuts.

Gently stir the blended pine nuts into the porridge just once to combine. Avoid over-stirring or prolonged cooking after adding the pine nuts, as this can cause them to break down and alter the porridge’s texture and flavor. As soon as it comes to a gentle simmer after adding the pine nuts, turn off the heat.
