While kimchi pancakes are delicious with ingredients like tuna, this version is for those who crave the rich, savory taste of pork. To ensure the pork belly is a star, I’ve opted to leave the slices whole rather than chopping them. Chopped pieces can easily get lost, but laying them across the pancake makes for a visually appealing and incredibly satisfying result. This recipe is perfect for when you’re craving both kimchi pancake and grilled pork belly – it’s truly the best of both worlds! The amount of water needed will vary depending on the kimchi’s moisture content, so aim for a batter that’s neither too thick nor too thin. (You’ll likely need about 150-200ml of water.) The batter should flow slowly from a spoon.
