Hello! Today, I’ll show you how to make a delicious sweet and savory stir-fried dried shredded squids (Jinmichae Bokkeum) that everyone loves. This recipe is perfect for a rice side dish or even for lunchboxes, completing a tasty meal!

First, we’ll prepare the dried shredded squids to make them tender. Place 200g of jinmichae in a bowl and lightly rinse it under running water. Be careful not to rinse for too long, as it can wash away the flavor! After rinsing, drain the jinmichae thoroughly in a colander. Add 2 tablespoons of mayonnaise to the drained jinmichae and gently mix it with your hands until well coated. The mayonnaise will coat the squids, preventing them from burning during stir-frying and adding a much softer and nuttier flavor.

Now, let’s make the sauce. Heat a frying pan over medium heat and add a little cooking oil. Then, add 2 teaspoons of soy sauce and 1 teaspoon of corn syrup. (Feel free to adjust the amount of corn syrup if you prefer it sweeter.) Once the sauce starts to bubble, add the mayonnaise-coated jinmichae. Reduce the heat to low and stir continuously with a spatula, ensuring the sauce evenly coats the squids and prevents burning. Stir-fry for about 3-5 minutes. Finally, turn off the heat, sprinkle with toasted sesame seeds, and it’s ready!
