Jokbal is a perfect dish to share with friends or family, and making it yourself will make it even more delicious! Main Ingredients

  • 1.5kg Mini Pigs’ Trotters
  • 5 Bay Leaves
  • 4 Spring Onions (or 1 large leek)
  • 10 Cloves Garlic
  • 4 pcs Ginger (about the size of garlic cloves)
  • 20 Whole Peppercorns
  • 1 tsp Cloves
  • 2 Star Anise
  • 180ml Soy Sauce
  • 100ml Cooking Wine (like Mirin)
  • 100ml Rice Wine (or Soju)
  • 2 Tbsp Sugar
  • 2 Tbsp Corn Syrup (or Oligosaccharide)
  • 1 Tbsp Doenjang (Fermented Soybean Paste)
  • 1 Tbsp Oyster Sauce
  • 800ml Water (4 cups)

Cooking Instructions

Step 1

Begin by soaking the mini pigs’ trotters (1.5kg) in cold water for 2 hours to remove any blood. This step is crucial for a clean taste and to eliminate any gamey odor. After soaking, rinse the trotters thoroughly under running water. Place the trotters in a large pot, cover with water, and bring to a boil over high heat to remove impurities. Once boiling, simmer for about 10 minutes, then discard the water. Rinse the trotters again under cold water and clean them well. This blanching process is vital for removing any unwanted smells.

Now, place the cleaned trotters into your Instant Pot. Add the bay leaves (5), spring onions (4, or 1 leek), garlic cloves (10), ginger pieces (4), whole peppercorns (20), cloves (1 tsp), star anise (2), soy sauce (180ml), cooking wine (100ml), rice wine (100ml), sugar (2 Tbsp), corn syrup (2 Tbsp), doenjang (1 Tbsp), and oyster sauce (1 Tbsp).

Finally, pour in 800ml (4 cups) of water. Select the ‘Pressure Cook’ or ‘Soup/Stew’ function on your Instant Pot and cook for 20 minutes. Using the pressure function will ensure the trotters become incredibly tender and moist.

Once the 20-minute cooking cycle is complete, carefully release the pressure. Gently remove the cooked trotters from the pot and place them in a colander to cool down slightly. Allow them to cool just enough so they are comfortable to handle – this will make slicing easier and prevent them from falling apart.

While the trotters are cooling, take about 4 tablespoons of the cooking liquid (broth) from the pot and reduce it over medium heat until it thickens slightly into a glaze. Brush this glaze evenly over the surface of the trotters for an extra layer of flavor and a beautiful sheen. Finish by sprinkling toasted sesame seeds on top for added texture and aroma.
