- Soaked glass noodles (as needed)
- Green onions (for garnish)
Broth Ingredients- Radish 1 piece (approx. 200g)
- Onion 1/2
- Green onions 2 stalks
- Garlic 1 handful (10-15 cloves)
- Ginger 1 piece (thumb-sized)
- Dried chili peppers 3 (e.g., Cheongyang or regular dried chilies)
- Dried kelp 1 piece (approx. 10x10cm)
- Whole peppercorns 1/2 teaspoon
- Water 4 liters
Seasoning and Broth Adjustment- Soy sauce for soup 5 Tbsp (Korean soup soy sauce)
- Fish sauce 2 Tbsp (Anchovy or sand lance)
- Flower salt (for adjusting taste)
- Minced garlic 1 Tbsp
- Finely chopped green onion (for garnish)
- Black pepper (to taste)

Cooking Instructions
Step 1
Prepare the beef ribs: Rinse the fresh beef ribs thoroughly under cold water. To remove blood impurities, soak them in plenty of water for about 1 hour, changing the water 2-3 times in between. This step ensures a cleaner broth.
Step 2
Prepare broth ingredients: Gather vegetables and aromatics that will add depth to the broth. Slice the radish thinly, and cut the onion into large pieces. Chop the green onions coarsely, and slice or leave the garlic and ginger whole. Also, have the dried chilies, kelp, and whole peppercorns ready.
Step 3
Slice the radish: Cut the radish for the broth into thin, flat pieces (about 0.5cm thick). This will add a refreshing taste to the soup.
Step 4
Blanch the beef ribs (initial boil): Fill a pot with plenty of water and bring it to a boil. Once boiling, add the prepared beef ribs. Starting from when the water returns to a boil, simmer for 4-5 minutes. This process is crucial for removing impurities and any gamey odors from the ribs.
Step 5
Rinse the blanched ribs: Remove the blanched ribs from the pot and rinse them thoroughly under cold running water. Carefully wash away any remaining blood or foam. This will result in a clear and clean broth.
Step 6
Begin simmering the broth: In a large pot, combine the rinsed beef ribs, sliced radish, and all the broth ingredients (onion, garlic, ginger, dried chilies, whole peppercorns). Pour in 4 liters of water and bring it to a boil over high heat.
Step 7
Simmer gently and season: Once boiling, skim off any impurities. Remove the kelp immediately. Then, reduce the heat to medium-low and let it simmer gently for about 1 hour. After 1 hour, remove all the broth ingredients (dried chilies, green onions, garlic, ginger, etc.). Strain the broth to get a clear liquid. Season the clear broth with 5 Tbsp of soup soy sauce and 2 Tbsp of fish sauce. Adjust the taste with flower salt if needed. Finally, stir in 1 Tbsp of minced garlic for added flavor.
Step 8
Finishing and serving (for an even better taste): In an individual earthenware pot (ttukbaegi) or a regular pot, place the soaked glass noodles at the bottom. Arrange the radish and tender beef ribs on top. Pour the warm beef rib broth over everything. Now, place the pot on the stove and bring it to a gentle boil for a few minutes. This allows the noodles to absorb the rich broth, making them even more delicious.

Add garnish: Once the galbitang is gently boiling, generously sprinkle the finely chopped green onions on top. Add a pinch of black pepper, if desired, for extra flavor.
