Super Simple Canned Saury Braised with Kimchi: A Recipe for Absolute Beginners! ♡
Perhaps the most daunting dish for novice cooks is anything involving fish! How about trying a super simple fish dish using canned saury? You might be surprised at how easy and delicious it can be! ♡
Main Ingredients- 1 can Canned Saury
- 1 bowlful Well-fermented Kimchi (Pa Kimchi)
- 1 Onion
- 1 stalk Green Onion
Seasoning- 1-2 Tbsp Red Pepper Flakes (adjust to taste)
- 1 Tbsp Fish Sauce
- 1-2 Tbsp Red Pepper Flakes (adjust to taste)
- 1 Tbsp Fish Sauce
Cooking Instructions
Step 1
First, prepare your vegetables. Slice the onion into ½ cm thick half-moons and the green onion diagonally into large pieces. Cut the kimchi into bite-sized pieces.
Step 2
In a deep pot, spread the sliced onions evenly on the bottom, without overlapping. The onions will help prevent the saury and kimchi from sticking and add a subtle sweetness.
Step 3
Generously layer the prepared kimchi over the onions. Then, open the can of saury, drain off some of the oil if desired, and arrange the saury pieces on top. A tip for beginners! Draining the oil from the can can reduce greasiness, but if you prefer fewer dishes to wash, you can use it directly from the can – it’s still delicious! The goal is to highlight the natural flavors. ♡
Step 4
Continue layering the kimchi and saury alternately, creating distinct layers. This stacking method ensures the seasoning distributes evenly and the dish holds its shape while cooking. Don’t discard the kimchi juice – pour all of it into the pot! If there isn’t enough liquid from the kimchi and saury, add about ½ to 1 cup of rice water or plain water until the ingredients are about half submerged. This will keep the saury moist and tender during cooking.
Step 5
Finally, arrange the remaining green onion slices attractively on top. If you enjoy a spicy kick, sprinkle red pepper flakes to your liking. The amount of red pepper flakes will determine the level of spiciness.
Step 6
Cover the pot with a lid and bring to a boil over high heat for about 5 minutes. Once the kimchi and saury begin to meld together, reduce the heat to medium and simmer for another 10-15 minutes. When the sauce has reduced significantly, taste and season with salt or fish sauce if needed to achieve your desired flavor. Your delicious braised saury is now ready!

Serve the braised saury with kimchi in an attractive dish. It’s fun to pick out and enjoy the saury, kimchi, and onions. Gently mix everything with your chopsticks for an even better taste. ♡

I love to ladle some of the braising liquid over my rice to make it extra moist, then top it with saury, well-cooked kimchi, and crisp onion, mixing it all together.
