Main Ingredients

  • Mixed seafood 1 cup (thawed)
  • Onion 1 medium
  • Green onion 1/2 stalk
  • Slurry 1 Tbsp (1 Tbsp water + 1 tsp cornstarch, mixed)

Seasoning Sauce

  • Soy sauce 1 Tbsp
  • Gochugaru (Korean chili flakes) 1 Tbsp
  • Minced garlic 1 Tbsp
  • Sugar 1/3 Tbsp (approx. 1 tsp)
  • Oligodang (corn syrup) 1/2 Tbsp (approx. 1.5 tsp)
  • Water 3 Tbsp
  • Cooking wine (mirin, etc.) 1 Tbsp
  • Sesame seeds (ground) 1 tsp
  • Sesame oil 1 tsp
  • Water 3 Tbsp (for sauce)

Cooking Instructions

First, prepare the vegetables that will form the base of this dish. Peel and wash one medium-sized onion, then slice it thinly into strips. Finely chop half a stalk of green onion. Set the prepared vegetables aside for now.

Thaw the frozen mixed seafood beforehand by soaking it in cold water or by using your microwave’s defrost function. After thawing, lightly rinse it under running water and pat it dry. This helps remove excess moisture, leading to a cleaner taste.

Now, let’s make the delicious seasoning sauce! In a small bowl, combine 1 Tbsp soy sauce, 1 Tbsp gochugaru, 1 Tbsp minced garlic, 1/3 Tbsp sugar, 1/2 Tbsp oligodang, and 3 Tbsp water. Stir well with a spoon until all ingredients are dissolved. Making this sauce in advance ensures all the flavors meld together nicely.

Heat 1-2 Tbsp of cooking oil in a pan over medium heat. Add the prepared seafood first and stir-fry it. Cook the seafood quickly, stirring constantly to prevent sticking. Adding 1 Tbsp of cooking wine at this stage helps to eliminate any fishy odors and adds depth of flavor. Stir-fry until the seafood is just turning opaque.

Once the seafood is partially cooked, add the thinly sliced onions to the pan and stir-fry them together. Continue cooking until the onions become translucent and release their sweet aroma, which will enhance the harmony with the seafood. Stir occasionally to prevent burning.

When the onions are tender and softened, pour the pre-made seasoning sauce into the pan. Mix everything together quickly with a spatula or spoon, ensuring the sauce coats all the ingredients evenly. Stir-fry until the sauce thickens slightly and coats the ingredients with a glossy sheen.

Once the sauce has well combined with the ingredients, add the chopped green onions and stir-fry for a very short time. The crisp texture and fresh aroma of the green onions will elevate the dish. Avoid overcooking; stir-fry over high heat for about 10-20 seconds to maintain their freshness.

To achieve the desired consistency, add the cornstarch slurry. Pour the prepared slurry (1 Tbsp water + 1 tsp cornstarch) around the edges of the pan while stirring continuously. Once the sauce thickens, immediately turn off the heat. Turning off the heat right after adding the slurry prevents clumping and maintains a smooth texture.

After turning off the heat, stir in 1 tsp of sesame oil and 1 tsp of ground sesame seeds. The nutty aroma of sesame oil and seeds will further enhance the overall flavor of your seafood and onion rice bowl.
