Main Ingredients- Fresh bean sprouts 200g
- Imitation crab sticks (or similar seafood sticks) 60g
Dressing Ingredients- 3 Tbsp vinegar
- 1.5 Tbsp soy sauce
- 1 Tbsp sugar
- 1 tsp minced garlic
- 1 tsp sesame oil
- 3 Tbsp vinegar

Cooking Instructions
Step 1
First, rinse the bean sprouts thoroughly under cold running water. Bring a pot of water to a boil, then add the rinsed bean sprouts. Blanch them briefly, just for about 1-2 minutes, until they are tender-crisp. Overcooking will make them soggy, so keep a close eye on them.

Step 2
Gently shred the imitation crab sticks into thin strips, aiming for a length similar to the bean sprouts. This technique helps the crab meat absorb the dressing better and makes it easier to eat.

Step 3
In a small bowl, combine all the dressing ingredients: vinegar, soy sauce, sugar, minced garlic, and sesame oil. Whisk everything together until the sugar is completely dissolved and the dressing is well-emulsified. Taste and adjust seasoning if needed.

Step 4
Immediately after blanching, transfer the bean sprouts to a bowl of ice-cold water or run them under very cold water. This crucial step stops the cooking process, preserving their crisp texture and removing any slight bitterness. Once chilled, drain them thoroughly in a colander to remove excess water.

Step 5
In a larger mixing bowl, combine the chilled bean sprouts and the shredded imitation crab. Pour the prepared dressing over the ingredients. Gently toss everything together until well coated with the dressing. Serve immediately to enjoy the crispness and refreshing taste!
