Easy and Hearty Spam Sundubu Jjigae Recipe Using Leftover Spam and Soft Tofu
Don’t let that leftover Spam from gift sets go to waste! Transform it into a delicious Spam Sundubu Jjigae. This Korean stew combines the savory richness of Spam with the delicate texture of soft tofu, creating a hearty and spicy dish that’s perfect with a bowl of rice. It’s simple enough for beginners and packed with comforting flavors.
Main Ingredients- 1 can Spam (approx. 200g)
- 2 packages soft tofu (Sundubu, approx. 350-400g each)
- 1 Tbsp minced garlic
- A little chopped scallions (green part)
- 2 Korean chili peppers (Cheongyang), finely chopped
- 1/4 zucchini, cut into bite-sized pieces
- 1/2 onion, cut into bite-sized pieces

Step 1
Let’s introduce the Spam Sundubu Jjigae, a dish that’s truly a rice-lover’s dream!
Step 2
First, open the Spam can and take out the Spam. Place it in a plastic bag or container and mash it coarsely using a rolling pin or the bottom of a cup. Avoid mashing it too finely; leaving some larger chunks will provide a better texture.
Step 3
Heat a generous amount of cooking oil in a pot, or use the rendered fat from the Spam. Add the mashed Spam and stir-fry over medium-low heat until it becomes golden brown and slightly crispy. If using Spam fat, you might not need much additional oil. Sautéing until the Spam releases its savory aroma is key.
Step 4
Once the Spam is nicely browned, add 3 tablespoons of Gochugaru (Korean chili powder) and reduce the heat to low. Stir-fry for about 1 minute, being careful not to burn it, to create a chili oil base. This step infuses the stew with a deep, spicy flavor. Then, add 1 tablespoon of oyster sauce for extra umami and stir-fry for another 30 seconds to enhance the aroma.
Step 5
Pour in 300ml of water and bring it to a boil over high heat. Once boiling, reduce the heat to medium, add the chopped onion and zucchini. Cover the pot and let it simmer for about 5 minutes until the vegetables are tender. The vegetables will add a natural sweetness and freshness to the broth.
Step 6
When the vegetables are partially cooked, add the soft tofu. It’s best to either add the tofu blocks whole or cut them into large pieces. This way, you can enjoy the soft, silky texture of the tofu without it breaking apart too much. Gently stir once after adding the tofu, then let it simmer.
Step 7
As the stew starts to bubble with the tofu, add the chopped scallions, finely chopped Korean chili peppers, and a pinch of black pepper. Let it simmer for a few more minutes. The freshness of the scallions and the heat from the chilies will further enhance the stew’s complex flavor.

Finally, taste the stew and adjust seasoning if necessary with salt or soy sauce. (Since Spam and oyster sauce are already salty, it’s best to taste before adding more salt).
