Spicy and Sweet Stir-fried Pork (Jeyuk Bokkeum)

This is a Jeyuk Bokkeum recipe that my family loves and I end up making quite often. Thinly sliced pork shoulder is marinated in a spicy sauce and stir-fried to perfection, making it an incredibly delicious main dish. Even without a special secret sauce, its spicy and savory flavor is irresistible, making it a consistently popular dish with my family.

Main Ingredients

  • Pork shoulder, 600g (thinly sliced)
  • Scallions or green onions, a small amount (cut into approx. 2cm lengths)
  • Onion, 1 (thinly sliced)
  • Cabbage, 1/6 head (cut into bite-sized pieces)
  • Green chili peppers, 2 (sliced diagonally)

Seasoning Ingredients

  • Gochujang (Korean chili paste), 1 Tbsp
  • Soy sauce, 2 Tbsp
  • Oligosaccharide or corn syrup, 3 Tbsp (adjust sweetness to taste)
  • Gochugaru (Korean chili powder), 3 Tbsp
  • Cheongju (rice wine) or cooking wine, 2 Tbsp (to remove pork odor)
  • Ginger powder, 1/3 Tbsp (or 1/2 tsp minced ginger)
  • Minced garlic, 1 Tbsp
  • Black pepper, a pinch

Cooking Instructions

Step 1

First, let’s prepare the vegetables. Cut the onion in half and then slice it into 0.5cm thick strips. Chop the cabbage into bite-sized pieces. Slice the green chili peppers diagonally after removing the seeds. If using scallions or green onions, cut them into about 2cm lengths.

In a large bowl, place the thinly sliced pork shoulder (600g). Add all the seasoning ingredients for a delicious Jeyuk Bokkeum: 1 Tbsp gochujang, 2 Tbsp soy sauce, 3 Tbsp oligosaccharide, 3 Tbsp gochugaru, 2 Tbsp cheongju, 1/3 Tbsp ginger powder, 1 Tbsp minced garlic, and a pinch of black pepper.

Gently mix the pork and seasoning with your hands until well combined. This recipe uses common ingredients, making it easy to create a delicious Jeyuk Bokkeum. Marinate for at least 10 minutes to allow the flavors to meld into the pork.

Heat a pan over medium-high heat. Add the marinated pork and begin stir-frying. Break up the pork as it cooks so it doesn’t clump together.

Once the pork is partially cooked, add the prepared cabbage and onion to the pan. Continue to stir-fry, mixing everything together evenly until the vegetables are slightly softened.

Stir-fry until a light sauce forms and all ingredients are cooked through. Finally, add the sliced scallions (or green onions) and green chili peppers. Stir briefly to combine, then sprinkle with sesame seeds to finish. Be careful not to overcook, as the vegetables can become too soft.
