Introducing a beloved classic side dish enjoyed by all generations: Sausage and Vegetable Stir-Fry. Stir-fried with a sweet, sour, and spicy sauce, it’s a perfect accompaniment to drinks and a hearty meal. While you can substitute fish cakes for some vegetables, this recipe focuses on a nostalgic flavor profile elevated with a touch of luxury. We’ve used the basic combination of gochujang, ketchup, and sugar, enhanced with black pepper, and then added the sophisticated aroma of truffle oil and a thrilling smoky flavor from a quick flambé. It’s incredibly easy to make with frozen mixed vegetables and Vienna sausages, but feel free to use fresh vegetables you have on hand for an even richer taste. This dish, delicious even when stored, is perfect for any occasion.
Main Ingredients- 500g Vienna sausages
- 300g Frozen mixed vegetables (or fresh onion, bell pepper, carrot, etc.)
- 1 tsp Truffle oil
Cooking Instructions
Step 1
First, heat a pan over medium-low heat and add 2 tablespoons of gochugaru (or chili oil). Gently stir-fry to release its fragrant and spicy aroma, being careful not to burn it. This step is key to building the flavor base.
Step 2
To the fragrant chili oil, add 500g of Vienna sausages and 300g of frozen mixed vegetables. For the sausages, you can simply add them whole. If you prefer a decorative touch, you can score them crosswise so they open up like flowers when cooked, or make several small cuts along the sides.
Step 3
As the ingredients begin to cook, stir in 3 tablespoons of ketchup, 2 tablespoons of gochujang, and 1 teaspoon of kimchi base (or fish sauce). Mix well to ensure the sauce coats everything evenly. Sauté for about 2-3 minutes until the flavors meld together.
Step 4
Once the vegetables and sausages are well-coated with the sauce and the gochujang and ketchup have combined nicely, sprinkle in 1 teaspoon of black pepper to enhance the overall flavor. Adding pepper towards the end helps preserve its aroma.
Step 5
Now for the exciting smoky flavor! For safety, either turn off the gas burner briefly or reduce the flame to very low. Then, use a kitchen torch to quickly flame the ingredients with high heat. You might hear a ‘pop’ sound as the sausages react to the flame, which is perfectly normal. After applying the smoky flavor, turn the heat back up to high and stir-fry quickly for about 1 minute.
Step 6
Turn off the heat and finish by drizzling 1 teaspoon of truffle oil over the stir-fry. A few drops (‘tok tok tok’) will release the luxurious aroma of truffle oil, making your sausage and vegetable stir-fry exceptionally flavorful. To best preserve the truffle aroma, add it immediately after turning off the heat.
