  • Category : Main dish
  • Ingredient Category : Seafood
  • Occasion : Everyday
  • Cooking : Raw
  • Servings : 2 servings
  • Cooking Time : Within 60 minutes
  • Difficulty : Intermediate

Main Ingredients

  • Fresh halibut fillet or sashimi-grade halibut (as preferred)
  • 1.5 bowls of freshly cooked rice
  • Fresh wasabi (to taste)

Sushi Vinegar (Sushi-zu)

  • 5 Tbsp rice vinegar (or regular vinegar)
  • 3 Tbsp granulated sugar
  • A pinch of Korean salt (for flavor enhancement)

Cooking Instructions

Step 1

Take the halibut fillet out of the refrigerator and prepare it. Great cooking always starts with fresh ingredients!

Step 1

Step 2

Gently pat the surface of the halibut fillet dry with a kitchen towel. This step helps in achieving cleaner cuts when slicing the fish.

Step 2

Step 3

Now, it’s time to slice the halibut into bite-sized pieces. First, separate the fin area from the main body of the fillet. The fins have a unique chewy texture and rich flavor, so slicing them separately allows for an enhanced taste experience.

Step 3

Step 4

If you have plenty of halibut fillet, consider slicing it for various uses like sushi, sashimi, or donburi (rice bowl). For sushi, slicing the fish at a diagonal angle will create wider pieces that look more appealing when placed on the rice. 🙂

Step 4

Step 5

Keep the pre-sliced halibut separated into portions for fin sushi, body sushi, and rice bowl topping.

Step 5

Step 6

You can make a simple sushi vinegar mixture quickly and easily using a microwave. Prepare a microwave-safe bowl, add 5 tablespoons of vinegar and 3 tablespoons of sugar. Add a pinch of salt for flavor. Stir well, then microwave for about 30 seconds until the sugar is dissolved and the mixture is well combined. It’s truly that simple!

Step 6

Step 7

Have your fluffy, warm, freshly cooked rice ready, along with the sushi vinegar you just made and fresh wasabi. These are the key ingredients that define the taste of your sushi.

Step 7

Step 8

Now, gently mix the sushi vinegar into the warm rice. Adjust the amount of vinegar based on the quantity of rice and your preference for seasoning. Use a spatula held upright to gently fold the rice, being careful not to mash the grains. Adding just enough vinegar so the rice feels slightly moist will prevent the rice from sticking to your hands when forming the sushi and help create beautifully shaped pieces.

Step 8

Step 9

Take a portion of the prepared sushi rice, about one bite-sized amount, and shape it into an oval on your palm. Place a small dab of fresh wasabi on top, according to your preference. Be mindful not to use too much wasabi, so it complements rather than overpowers the natural flavor of the halibut.

Step 9

Step 10

Finally, carefully place a slice of the pre-cut fresh halibut onto the prepared sushi rice. Your delicious halibut sushi is now complete! Sushi made with such care offers a truly special culinary satisfaction.

Step 10

Step 11

You’ll find that making this sushi is as easy as preparing inarizushi (stuffed tofu sushi). Enjoy a special gourmet experience at home with your own freshly made halibut sushi!
