  • 1 bunch fresh wild garlic (dallae)

Seasoning Ingredients

  • 1 Tbsp soybean paste (doenjang)
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp minced garlic
  • 1 Tbsp perilla seed powder (deulkkae garu)
  • 2 Tbsp perilla oil (deulgireum)

Cooking Instructions

First, we’ll wash the wild garlic thoroughly. Since it’s often harvested directly from the soil, gently rub it with your hands under running water to remove all dirt. Pay special attention to the root area to ensure it’s completely clean.

Now, let’s remove excess water from the washed wild garlic. Lay out a few sheets of paper towel and place the cleaned wild garlic on top. Allow it to sit for a moment so the paper towel can absorb most of the moisture.

Once the wild garlic is mostly dry, it’s time to store it to keep it fresh. Gently roll the wild garlic up in the paper towel, like a small log. Place this rolled bundle into a zip-top bag or an airtight container. Stored this way in the refrigerator, it can stay fresh for over a week!

Ready to make the delicious soybean paste wild garlic salad? Take out the stored wild garlic and cut it into bite-sized pieces, about 3-4 cm long. Place the cut wild garlic into a mixing bowl.

Now, let’s mix in the seasonings and toss everything together. Add 1 Tbsp soybean paste, 1 Tbsp minced garlic, and 1 Tbsp perilla seed powder to the bowl with the wild garlic. Gently mix these first. Once combined, add 1 Tbsp gochugaru and 2 Tbsp perilla oil. Use your hands to gently toss and mix the salad. Be careful not to overmix or squeeze too hard, as this can diminish the wild garlic’s delicate aroma.
