  • 1/3 red bell pepper
  • 1/3 green bell pepper
  • 1/3 onion
  • 1 stalk green onion
  • 1 tbsp red pepper flakes (or to taste)

First, rinse and thaw the pre-prepped frozen shrimp under cold water, then pat them dry. Season the shrimp with 2-3 tablespoons of cooking wine (or sake) to eliminate any fishy odor. Add a pinch of black pepper and salt (or herb salt for extra flavor). Using herb salt here complements the garlic butter sauce beautifully.

Prepare the vegetables that will add wonderful flavor to your garlic butter shrimp. Wash the red bell pepper, green bell pepper, and onion. Remove the seeds and dice them into small cubes or thinly slice them. These vegetables are delicious when eaten with the shrimp on top of bread. If you don’t have these vegetables on hand, feel free to skip this step.

To create an aromatic base, thinly slice the garlic and finely chop the green onion. Heat a generous amount of cooking oil in a wide pan over medium-low heat. Add the sliced garlic, chopped green onion, and red pepper flakes, and sauté until fragrant. Ensure you use enough oil to cook all the ingredients comfortably. If you prefer less spice or don’t have red pepper flakes, you can substitute with a chopped chili pepper or omit them entirely for a milder flavor.

Once the garlic and green onion release their aroma, add the seasoned shrimp to the pan. Sauté over medium heat, stirring occasionally, until the shrimp turn pink and are about halfway cooked.

When the shrimp are about 50-70% cooked, add all the prepared vegetables (bell peppers, onion) to the pan. Continue to stir-fry everything together until the vegetables soften and the shrimp are fully cooked. Once the shrimp are completely cooked and the vegetables are tender, push the ingredients to one side of the pan and add 1-2 tablespoons of butter. Allow the butter to melt, then toss all the ingredients to coat them evenly. Using unsalted butter enhances the natural flavors and adds a richer, more buttery taste. Taste the dish and add a little more salt if needed.

Finally, sprinkle a pinch of dried basil over the dish for an extra layer of fragrance. Just like in gambas al ajillo, basil adds a wonderful freshness. If you’re not a fan of basil, you can substitute with dried parsley or omit it altogether. Give everything one last gentle toss to combine.
