Don’t throw away leftover or cold chicken from last night! Introducing an incredibly simple chicken tortilla pizza that can be made in just 10 minutes on your stovetop. Its fantastic flavor, loved by both kids and adults, combined with the thin, crispy tortilla crust and generous toppings, makes for a wonderful meal or a special snack. It’s the perfect recipe to utilize leftover chicken for both taste and value!

Pizza Ingredients

  • 2 Tortillas (20 cm each)
  • 80g Leftover Chicken or boneless chicken
  • 2 Sausages
  • 50g Onion (approx. 1/4)
  • 30g Carrot (approx. 1/5)
  • 2 slices Pineapple (sliced)
  • 100g Mozzarella Cheese
  • 3 slices Cheddar Cheese
  • 2 Tbsp Peas
  • 2 Tbsp Corn (canned or frozen)
  • 1.5 Tbsp Butter
  • A pinch of Parsley flakes (for garnish)

Sauce Seasoning

  • 1 Tbsp Ketchup
  • 0.5 Tbsp Hot Sauce (adjust to taste)

Cooking Instructions

First, prepare all the ingredients for the pizza. Wash and prepare them for cooking.

Cut the chicken into slightly larger than bite-sized pieces. Slice the pineapple and sausages similarly. Finely chop or julienne the onion and carrot. Smaller pieces cook faster and blend better into the toppings.

In a small bowl, mix 1 Tbsp ketchup and 0.5 Tbsp hot sauce to create the pizza sauce. If you prefer it spicier, add more hot sauce, or use sweet chili sauce for kids. (Using hot sauce provided by a chicken restaurant is convenient.)

Melt 0.5 Tbsp butter in a wok or large skillet over medium heat. Add the cut chicken, onion, carrot, and sausages. Sauté until the onions become translucent and the ingredients are lightly browned. Finally, add the peas and corn, stir briefly, and turn off the heat. Stir-frying the ingredients first enhances their flavor significantly.

Tip: Avoid overcooking the ingredients over high heat, as they can become dry. Sauté over medium heat just enough to cook and enhance the flavor for the best taste.

Place one tortilla in the pan, layer it with 3 slices of cheddar cheese, and then cover with the second tortilla. This helps the two tortillas stick together and ensures a crispier crust.

Spread the prepared pizza sauce evenly over the top tortilla. Generously pile the sautéed chicken topping mixture from step 3, and finally, sprinkle 100g of mozzarella cheese evenly over everything. Cover with a lid and cook over low heat for about 2-3 minutes until the cheese is fully melted and the bottom of the tortilla is golden brown.
